Made a big pot of hearty blended vegetable soup, used 7 vegetables
and 3 pastinas. That should last for several meals.
Hubby made chili last night so we will have that with Garlic bread and a tossed salad.
Anyone hear from or about Wolfie?
Went to Costco today, we had their hotdog, drink ($1.50) and shared fries with hubby. Then went to see Star Wars at Cineplex VIP and had popcorn. So no one is hungry for dinner. Maybe later, i`ll have a couple of homemade bran muffins, tea and a handful of strawberries. Hubby said he would make himself some toast with cheese (not grilled cheese but 2 pièces of toast with a slice of Kraft singles).
Hot hamburger, mashed potatoes and mixed vegetables.
Nothing from Wolfie, sure hope all is okay...
For using leftover boiled chicken from making soup, I always make it the same way - so I hunted google for something at least a bit different.
So it's still a casserole - cut up chicken meat; sauteed onions, celery, cauliflower, parcooked peas and carrots; sauce made from cream of chicken soup mixed with sour cream; topped with stovetop stuffing and bake.
It sounds good, hoping it tastes okay!
^ Sure hope Wolfie is OK to, Unusual for her not to be posting.
Last night I wasn't feeling well when I got off work so I just had a hard boiled egg sandwich followed with being in bed by 7 pm.
To plan ahead for today in case I still wasn't feeling well I took out Lasagna Soup so just have to make pasta to add. I do not like the texture soup gets when pasta is cooked in as well I find it does not always freeze well so I make the pasta separate and serve the soup over the pasta.
The casserole I explained above was really quite good - I made rice to go along with it, mostly to bulk up the meal for my husband, but it wouldn't really be needed.
Tonight we are having pork chops (that have been marinating since last night), broccoli with cheese sauce and boiled carrots.
Tonight we are having chicken drumsticks on the bbq, homemade potato wedges in the oven with green beans and probably a garlic loaf from freezer ($1 at FB) since the kids like that :)
Good Morning Everyone :) Laundry started and made Hamburger Helper Casserole ( Love baking it in the oven in a casserole dish after it is made and load the top with lots of shredded cheese) I took out a Garlic Toast ( From NF's for 1.00 and the bread is yummy-Thanks to other poster above for reminding me I have some in the freezer ) I will make a huge bowl of Oriental salad to have on the side. Trying to eat more vegs. each day :) Might make Beef Stew today as chilly here and I have a busy day tommorow . Will be nice to come home and just re-heat. Have Cheese Buns to use up so will serve those as well and maybe tossed salad. Well I'd better giddy up and get the Laundry finished and also finish my morning routine. Have an amazing day everyone :)
I hope to have beef stew ready. Not feeling so peepy today.
No idea Mom is home today and not feeling well, so I will leave dinner up to whatever she thinks she can handle.
...yesterday I had to brave the cold and stock up on some fresh groceries, etc so I ended up buying ground beef & making burgers & wedge fries ..the cod was still kinda frozen so I'm having that this evening :-)
I'm going to make chicken with a side of cauliflower tonight because I'm trying to use it up before it goes bad. BTW, does anyone know why cauliflower is soooo expensive? I bought one at Loblaws and it cost $6.99 and it wasnt even organic. I haven't bought cauliflower in forever so maybe it's always been this way? Seems pretty crazy for a vegetable!!!
They are priced that way because of the lower loonie and the drought in California.
Fend for my self tonight, wife is out with friends so pizza sounds great.
Honestly, I think the cheap bagged cabbage mix is making sure we get our cruciferous veggies - I sauteed some up and froze it to use in casseroles, used another for coleslaw.
Minor Ukrainian Christmas Eve supper tonight - potato and sauerkraut perogies, meatless lazy cabbage rolls, sauteed onions and mushrooms, and sole amandine for our fish dish.
Like many I'm trying to eat healthier and now more so due to the health scare/issues I'm having. Now I've always enjoyed kale but now I'm in LOVE! I've made 2 recipes the last 2 nights and I'm making it again tonight.
Here's the link to the first recipe. It is delish served cold but oh so yummy when served warm! I added kale and subbed almonds instead of pumpkin seeds since I didn't have them.

I made a similar one last night. I sautéed red onion, garlic, dried cranberries and kale with a bit of balsamic vinegar with the roasted squash and almonds. SO YUMMY!
