Shipwreck
----------
2 large onions, sliced thin
3 medium potatoes, sliced thin
1 pound ground beef - raw
1/2 cup long grain rice - raw
1 cup celery, chopped (or frozen mixed veggies)
salt and pepper
1 can condensed cream of tomato soup
1 can measure of hot water
Whisk these two together in a separate bowl.

Use a 2 L/qt. casserole dish or roaster.
Put onions on bottom, salt and pepper. Next the potatoes, salt and pepper.
Pat the ground beef overtop, fit to cover potatoes, don't push down too hard on it. Sprinkle with salt and pepper (I add garlic powder, too).
Sprinkle on the rice, then the celery (or veggies).
Pour the soup and water mixture on overtop - you can poke meat with a knife so most goes through.
Bake covered at 350 degrees for two hours.

Nope, raw ground beef - I'll add that mention to the recipe.

Chicken and Rice Dinner
1 Chicken cut up,or your choice of chicken meat
1/4 -1/3 cup flour
2 tbsp oil,your choice
1 cup uncooked rice
1 tsp salt
1 1/2 tsp poultry seasoning or seasoned salt
3/4 tsp pepper
3/4 cup milk 1 1/2 cups water
**Season more or less,according to your tastes.
Dredge chicken pieces in flour. In skillet,heat oil on meduim and brown chicken on all sides. Meanwhile, combine rice,seasonings, milk and water. Pour into a greased 13" x 9" x 2".baking pan. Top with chicken. Cover tightly with foil and bake at 350' F. For 55 min. or untill chicken and rice are tender.

chicken caesar tetrazini (pardon my spelling)
this is so easy!
1 cup cooked chicken, cubed or shreded
1 can chicken broth
1 cup (or more if you want) caesar salad dressing
1 can sliced mushrooms
1/4 cup bread crumbs
1/4 cup parm cheese
tetrazini noodles
preheat oven to 350. cook your pasta until el dente and drain. mix your chicken broth, salad dressing (i like the rene's one - mighty caesar), cubed chicken, can of mushrooms and half of the bread crumbs and 1/2 of the parm. cheese in a large bowl and add your pasta. pour into large caserole dish and top with remaing parm cheese and breadcrumbs. bake for 20 mins or so until bubbly. so yummy and easy!

Lazy Cabbage Rolls Casserole
(with or without meat)
1 cup rice (short grain is best, but long is okay)
2 cups water
1 teaspoon salt, few shakes pepper
1 Tablespoon margarine
----
1 medium onion, chopped
3 Tablespoons margarine
(option - 1 pound lean ground beef)
3 cups shredded cabbage
1 can tomato soup; 1 can water
salt, pepper, dill
Cook rice the way you usually do. I nuke mine.
In a dutch oven, cook onion in margarine til softened. (If using ground beef, add now and cook til pink is gone.)
Add cabbage, stir around, and keep cooking and mixing maybe five minutes til it wilts a bit.
Add salt and pepper to taste; I also add several shakes of dill.
Put this in a 9x13 baking dish, add cooked rice and mix together well. Add a can of tomato soup, and a can of water, and mix all together.
Cover with foil. Bake 350 degrees about 45 minutes. Uncover, let sit 5 minutes. Mix and serve!

O.K. natalka...
The lazy cabbage rolls are in the casserole dish baking, just 20 min. or so left. My DH asked if I needed help to make it when I told him what I was going to make for dinner. I said yes, yes yes! Apparently I am even lazier than I first thought. I'll let you know how we all like it.

I love casseroles... a good tip- it's just as easy to make 2 as it is to make 1 so make an extra and freeze it. It's great for days you don't feel like cooking, just take it out and pop it in the oven Here's one of my favorites:
Chicken, Broccoli and Rice Casserole
4 servings of instant brown rice
4 small chicken breasts
approx 1c. frozen or fresh (cooked) broccoli
cheese
bread crumbs
2 cans cream of mushroom soup
garlic powder
Cook chicken for about 30-45 minutes. Prepare bread crumbs while you're waiting.
Crush crackers (I use ritz or cheese crackers) in baggie with garlic
salt to taste. Set aside. Cook rice and broccoli. Cut chicken into bite size pieces.
In a casserole dish mix chicken, broccoli, rice, soup, garlic powder to taste, salt, pepper and as much cheese as you want. Top with grated cheeese and spread bread crumbs on top.
Cook in 350 degree oven, uncovered, for 30 minutes. Let sit for about 5 minutes and then dig in!Soft kitty, warm kitty, little ball of fur... happy kitty, sleepy kitty, purr purr purr

Well no pictures available as most of the casserole is eaten, but it started out as I was trying to find a way to " use " the 24 or so leftover cheese tea biscuits I had made to go with a big pot of chili.
I boiled 2 1/2 bags of the whole wheat egg noodles, and made a casserole by mixing in 2 cans clam/seafood chowder, 2 jars of the alfredo white sauce, 3/4 bags of sweetlet peas, and a bag of cooked shrimp.
Then I placed the biscuits 4 across by 5 down into the mixture, sort of sinking them into it. Covered well with foil, baked maybe 1 hr.
Every serving had a " dumpling" style tea biscuit in it.
Nice combo I found the taste of the seafood and the cheddar cheese.
