Cream Cheese Mints
1 3-ounce package of cream cheese, softened
½ tsp of peppermint extract (or other flavouring)
3 cups sifted powdered sugar
Few drops of food colouring
- Combine softened cream cheese and peppermint extract. Gradually add powdered sugar, stirring until mixture is smooth. (Knead in the last of the powdered sugar with your hands.) Add food colouring; knead until evenly distributed.
- Form cream cheese mixture into 1/2 –inch balls and placed on waxed paper. Flatten each ball with the bottom of a juice glass or with the tines of a fork. (Or sprinkle small candy molds lightly with sugar. Press ¾ to 1 teaspoon cream cheese mixture into each mold. Remove from molds.) Cover the mints with paper towels and let stand overnight. Store mints tightly covered in the refrigerator or freezer for up to 1 month.

Puffed Wheat Cake
1 cup syrup
1 ½ cups white sugar
1 cup margarine
8 tablespoons cocoa
3 teaspoons vanilla
16 cups puffed wheat
- Bring syrup, sugar, and margarine to a rolling boil in large pot, except vanilla. Boil for 30 seconds, until sugar is dissolved. Add cocoa and vanilla; quickly stir until mixture is smooth. Add puffed wheat and stir until equally coated. Press firmly into 9x13-inch greased pan.

No Bake Chocolate Drop Cookies
½ cup butter
½ cup milk
2 cups white sugar
3 cups rolled oats
1 cup coconut (or substitute with additional cup of rolled oats)
¼ cup cocoa
1 teaspoon vanilla
1. Melt butter in medium sized saucepan. Add milk and sugar; boil for 2 minutes, ensuring that all sugar is dissolved. Turn off burner. Add cocoa and vanilla. Remove from heat and add rolled oats and coconut.

Energy Bars that taste like cookie dough
1 cup rolled oats
1/2 cup peanut butter
3 Tb honey
1 tsp vanilla
tart cherries (I don't have any so I used semi-sweet chocolate chips instead)
Stir all of the ingredients together. Press into a small pan and place in the fridge. Cut up into squares. I admittedly ate it with a fork after. These Apple Nachos are FANTABULOUS! Yes, they are so good I had to make my own word to describe their deliciousness!Here is Sugary Sweets' Recipe4 large Granny Smith apples, sliced35 large marshmallows1/4 cup butter35 caramels1 Tbsp evaporated milk (or half and half)1/4 cup mini semi-sweet morsels2 Tbsp chocolate syrup
Slice apples and arrange on platter. In saucepan, melt marshmallows and butter until creamy. Set aside. In microwave dish, melt caramels with milk (cooking in 30 second intervals, and stirring). Set aside. Pour marshmallow cream over apple slices, followed by caramel sauce. Drizzle chocolate syrup and sprinkle with peanuts and mini chocolate morsels. Serve immediately and enjoy!
Apples will brown if they sit out for not very long. To help remedy the browning soak your sliced apples in a bowl or sink covered with water and some lemon. The amount of lemon depends on the amount of water, but I would suggest a couple of squirts - yes that is a measuring technique. This will let let the apples sit for an hour or two without browning - if they last that long!

Whenever we have a family gathering, my sister always brings a fruit salad. Just a bunch of fresh fruits, cut up and mixed together. It always varies depending on what's in season and on sale. But usually there's pineapple, grapes and strawberries, cut-up mango, or this time of year blueberries and raspberries on top (can't mix-in the raspberries, they'll get smushed).
Everyone always loves having some fruit salad after a heavy meal.

Triple Citrus Italian Ice
Triple citrus delight, Lemon, Lime and Orange. Heres a dessert that you prepare in advance. Good enough for the best tables.
3/4 cup granulated sugar
6 eggs
3 tablespoons butter at room temperature
1 teaspoon each zest of lemon ,lime and orange
1/4 cup each juice of lemon, lime and orange
2 cups whipping cream
food coloring (facilitative)

Orange Sauce
1/4 cup granulated sugar
1 tablespoon corn starch
1 tablespoon orange zest
1 cup orange juice
1 tablespoon butter
1 tablespoon orange liqueur (Triple Sec is good)

Take 3 medium microwaveable bowls and in each
Add
1/4 cup sugar
2 eggs
1 tablespoon soften butter
In the first bowl add
juice and zest of Lemon and whisk well.
In the second add
juice and zest of Lime and whisk well.
In the third bowl add
juice and zest of Orange and whisk well.
One at a time put bowls in microwave and cook for 1 minute on high.
Take out and whisk. put it back in microwave for 1 to 2 minutes or until just thickened. whisk until nice and smooth.
(Be careful not to overcook to much)
Cover bowl with plastic wrap and place in fridge.
Repeat for other 2 bowls.
In a big bowl whip whipping cream. Put same amount of whipped cream in each of the 3 bowls, add food coloring if desired. A few drops green for lime, a few drops and a few drops yellow and red for the orange.
Fold in gently
Line a 8x4 inch (20x10cm) pan with plastic wrap couple of layers.
Spread Lime mixture on bottom of pan. Then gently spread Lemon mixture over top. Lastly cover with Orange mixture.
Cover and put in Freezer for 8 hours or until the next day.

Orange Sauce
In a medium microwavable bowl mix the sugar and corn starch. Put in juice and zest of orange and liqueur if desired. The butter and salt.
Put in microwave on high for 2 to 3 minutes, stirring often. Cook until thickened. Cover with plastic wrap and put in fridge.
30 Minutes before serving put the Italian Citrus ice in the fridge, Then put upside down on plate, take off plastic wrap and cut into 1 inch (2,5 cm) slices, place on plates and put about 2 tablespoons of Orange sauce on top.

No Bake Cookie Dough Bars

1/2 c. unsalted butter, softened
3/4 c. brown sugar
1 tsp. vanilla extract
2 c. all purpose flour
1 (14 oz.) can sweetened condensed milk
2 c. chocolate chips
1/2 cup creamy peanut butter
1/2 cup milk chocolate chips
Directions
Line an 8×8 inch pan with parchment paper or aluminum foil and set aside.
In a large mixing bowl, mix together butter and brown sugar until it is fluffy. This takes about 3 minutes. Add vanilla and mix until combined.
Turn the mixer to low and alternate the flour and the sweetened condensed milk until combined. Gently fold in chocolate chips.
Press the cookie dough into the bottom of the 8×8 pan. It will be sticky so lightly flour your hands if needed.
Cover your bars with plastic wrap and refrigerate for 3 hours or overnight until firm.
To make the topping, combine the peanut butter and ½ cup chocolate chips in a microwave safe bowl. Stir every 30 seconds until smooth. Pour and spread over the top of the chilled dough and chill at least for 1 hour until firm.
