This morning a neighbour came by and gave me a pail of red tomatoes. I mean i love tomatoes but a pail? Anyway, im going to blanche the tomatoes, peel them and cut them into pièces and then freeze the tomatoes to use in soups, sauces, etc.
What i want to know is can i add the spices before freezing or is it best to add the spices as i use the frozen tomato pièces? Which would be best? I checked on Google and couldnt find a suitable answer. I dont want to stew the tomatoes, i just want to cut them and then freeze them. This thread is currently associated with: N/A

Better to freeze plain and then use spices/herbs in whatever recipe you will be making later.
That's what I do.

Thanks for the input. I just blanched, cut and froze the tomatoes in freezer bags.

Use baking paper if you dont want the tomatos to stick to the freezer bags

I put the tomatoes in small margarine containers. I think the containers average to a bigger can of tomatoes.

Make tomato ketchup, and then freeze them. And needn't buy any ketchup in the supermarket.

Tomato is brittle. Although you freeze it, it can't be fresh for long time. In my opinion, the best way is to eat them out early.
