grated cheese freezes well, but block cheese will go crumbly.

thank you guys for the info on letting it cool, so as not to shock the food, i think that's my mistake when freezing. also, i've tried freezing chilli, but it goes "weird" anyone else with that problem?

tip for freezing, DON'T USE $STORE BAGS..use good quality ziplock/glad, etc. the $store ones are too thin, and rip, you'll get freezer burn which taste terrible, and don't use those frigging bread bags that my mom tries to freeze meat in, i donno how any of us didn't wind up sick..

oh, onions, chop and freeze well too. then you can throw in casseroles, soups stews, sauce

i buy a 10lb bag and use the food processor saves $$$ too.

i have a double recipe for these large shell pasta, had cheese ..freezes terrific, if i can find it i will post for smaller servings just use smaller pans, top with cardboard and slide into a large zip bag, and freeze. you can thaw or put straight in oven. if metal, no microwave!
Thanks, NS! I should really try freezing stuff.

It seems like almost every afternoon, I am peeling and mincing garlic, peeling ang slicing onions, chopping tomatoes, peeling and slicing ginger, you probably get the idea, lol.

Hey, one of you should start a thread on freezer bags in the Canadian Product Reviews subforum.

I read somewhere you can also freeze soup stock/broth for later use. Let's say you did not use tupperware but used ziploc bag instead, how do you thaw it then? Thaw it in the fridge? Cut the bag up and dunk the ice soup in the pan? Nuke the bag? which I doubt, lol.

I buy garlic in bulk and then put through the food processor with a little bit of oil. it minces the garlic super small and i put it in a tupperware on the door of the freezer. i use it daily for pastas or rice or whatever needs garlic. its really easy that way.

as fr the broths, i do it too with chicken broth. i freeze it in tupperwares but my mom puts in a ziploc and then when she needs to thaw it there are two ways. either she will pull it out and put in a bowl until it thaws on the counter if in a rush she will put it in warm water and it will thaw out completely too. i wouldnt cut the bag.

i got more probs with ryan. stupid stuff. they had to pull him out of class because all he wants to do is hum, make noises and torment the other kids on purpose. they refuse to play with him at recess, he stands there looking like an idiot. he (because of his ODD) is emotionally immature for his age. he gets along better with 8 year olds than 11's. so no wonder the kids don't want to bother with him.

so i donno what to do. and he's lying to his teacher/vice principal, and i can see me having to walk this kid to/from school everyday. i have a half a mind to go pick him up afterschool, cause i'm sure he's gonna cause $hit on the way home.

How about slow roasting in oil?? The one thing he really like is his TKD right? Well be tough and tell him any more problems and no more TKD. You could also send him to my EX, he know how to punish!!

Now, I was hoping someone (anyone?) here could tell me how to freeze cooked food. I've heard it over and over again, cook a bunch and freeze the rest. Just how do you do it? I've never done it. I cook enough for a meal, then leftover goes in the fridge to be eaten the next day. If you plan to freeze cooked food, do you cook it thoroughly before freezing and just reheat it in the microwave straight from the freezer? Or do you thaw it first in the fridge? Won't the food taste "old"?

Can cheese be frozen as well? I've had several bars thrown in the garbage because they got moldy in the fridge. How do you keep cheese bars from getting moldy once packaging is opened? So I end up buying sliced cheese, more expensive, but no molds and no waste.
I know you have gotten lots of info today, but there is a lot more out there.

    Do searches using these phrases:
    recipes good for freezing
    casseroles good for freezing
    freezing foods
    recipes for freezing foods
    flash freezing foods
    methods of freezing foods
    freezing leftovers

Here is some info on what does NOT freeze well:
    General Freezing Information

Foods That Do Not Freeze Well

FoodsUsual UseCondition After ThawingCabbage*, celery, cress, cucumbers*, endive, lettuce, parsley, radishes--As raw saladLimp, water-logged,quickly develops oxidized color, aroma and flavor

Irish potatoes, baked or boiled In soups, salads, sauces or with butter--Soft, crumbly, water-logged, mealy

Cooked macaroni, spaghetti or rice--When frozen alone for later use--Mushy, tastes warmed over

Egg whites, cooked In salads, creamed foods, sandwiches, sauces, gravy or desserts--Soft, tough, rubbery, spongy

Meringue In desserts--Soft, tough, rubbery, spongy

Icings made from egg whites, Cakes, cookies--Frothy, weeps

Cream or custard fillings, Pies, baked goods--Separates, watery, lumpy

Milk sauces For casseroles or gravies --May curdle or separate

Sour cream As topping, in salads,--Separates, watery

Cheese or crumb toppings On casseroles--Soggy

Mayonnaise or salad dressing On sandwiches (not in salads)--Separates

Gelatin In salads or desserts Weeps

Fruit jelly Sandwiches --May soak bread

Fried foods--All except French fried potatoes and onion rings--Lose crispness, become soggy

    * Cucumbers and cabbage can be frozen as marinated products such as "freezer slaw" or "freezer pickles". These do not have the same texture as regular slaw or pickles.
Effect of Freezing on Spices and Seasonings

    • Pepper , cloves, garlic, green pepper, imitation vanilla and some herbs tend to get strong and bitter.

    • Onion and paprika change flavor during freezing.

    • Celery seasonings become stronger.

    • Curry develop a musty off-flavor.

Salt loses flavor and has the tendency to increase rancidity of any item containing fat.

When using seasonings and spices, season lightly before freezing, and add additional seasonings when reheating or serving.

Cheese tends to mold faster when it is handled. Try holding it by the outside of the wrapper or holding it with a paper towel. Also cheese is still good when it is moldy-just cut off the mold. Sometimes and rinse and pat dry the block after I cut the mold off.

They say to never thaw at room temp. Bacteria starts mutiplying before it thaws completely. If you need it right away, thaw in sink of warm water(I change the water several times)and cook right away or thaw in microwave. If you don't need it right away, it's best to thaw in the fridge. Keep in mind that it takes a good while. A lot of things can go straight from freezer to oven or microwave.
