    Yes, it was a very nice sunny day. Had my first 1/2 price frappiccino (coconut mocha), went to a few houses on the Beaches Art Tour, and bought 3 DVD's for $9.99 at Rogers. Also got 3 boxes of Kernels microwave popcorn for the price of 1. The store is going to stop renting movies so they have a buy one get 2 free sale.

    Sounds like your a pretty good cook Mechman! Enjoy your dinner! I was thinking of making some eggplant parm. soon. What's is your recipe like? and that spinach sounds good!

    I don't have a real recipe, just made it up a long time ago.
    Fry the eggplant slices in Italian dressing, tonight I used olive oil and pesto.
    Oil the casserole dish.
    Layer of fried eggplant, cover with tomato sauce, then a layer of parmigiana
    repeat only middle layer I use provolone or mozzerella
    then third layer of eggplant, more sauce and lots of parmigiana.
    Bake approximately an hour at 350
    remove from oven, cover and let stand for ten minutes before serving (helps hold everything together)
