Here's the recipe for that pumpkin loaf...it's more a cake than a 'bread', but boy does our 6 yr old grandson love it...I fold in raisins. Oh! And I use a LARGE can of pumpkin (not pie filling!) instead of the 15oz one! I made that mistake the first time and everything turned out so wonderful, I only use the large 700+ml can now! And so easy...if you have a KitchenAid, you just dump everything in...wet, then the dry!
Just do a search for "Down East Maine Pumpkin Bread" in Allrecipes.com. I'm logged in and I'm afraid if I log out I won't remember my info to get back in! LOL! And I have a ton of saved recipes I'd rather not lose...:-~ It makes beautiful loaves to accompany your tea or coffee! I added whole pecans to the part that I didn't use for the cupcakes, since our grandson is allergic to nuts.
