i baked a carrot cake for the first time and it turned out pretty good, i added chopped dark chocolate chunks in it

Yesterday i started some holiday baking. I know its kinda early but at my age, im slowing down so im getting an early start. Good days come and go so....... Anyway, yesterday i baked Shortbread cookies and my old fashioned Peanut Butter Cookies. Today i made Oatmeal Raisin cookies. Recipes will follow in the next few days. Some peeps dont like sharing recipes or give you the wrong ingredients, i dont mind. Thats how old time recipes are preserved. So i share and i say Bake Away! Happy Holidays.
Oh and by the bay, the majority of my recipes can be frozen. If you have a freezer, freeze away!.

this peanut butter cookie recipes is from the Kraft peanut butter jar from many many years ago. The recipe that is there now doesnt compare with this old one.
PEANUT BUTTER COOKIES
1 cup peanut butter
1 cup margarine
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 tsp vanilla
2 1/2 cups all purpose flour (i use Five Roses)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Cream peanut butter, magarine and sugar. Blend in eggs and vanilla. Add flour sifted with baking powder, soda and salt. Mix well. Form rounded tsps of dough into balls. Place on ungreased baking sheets (i always use parchment paper but thats my preference). Flatten slightly with fork. Bake at 350F for about 12 minutes (my oven cooks faster so i bake for 10 minutes, you know your oven so adjust the times accordingly). Makes about 7 dozen cookies. Enjoy!

This recipe is from the Bensons Corn Starch box. This is the recipe that ive been using for years, its ok, but im looking for a better one.
SHORTBREAD COOKIES
1/2 cup corn starch
1/2 cup icing sugar
1 cup flour
3/4 cup butter
Sift corn starch, icing sugar and flour together. Blend in butter with spoon, mixing until a soft, smooth dough forms. Shape dough into 1 inch balls. Place about 1 1/2 inches apart on ungreased cookie sheet; flatten with a lightly floured fork. (i just make an indentation with my thumb and put a quarter slice of candied cherry to give it that festive feel) Bake at 300F for 20-25 minutes or until edges ar lightly browned. (as stated before you know how your oven bakes, so adjust the baking times accordingly) Makes about 3 dozen cookies. If dough is too soft, cover and chill about 1 hour. Enjoy!

The Gooseberry Patch cookbooks are a great source of raisin recipes. This is their Classic Raisin Oatmeal Cookies recipe. Another recipe that i have been using for years and years.
CLASSIC RAISIN OATMEAL COOKIES
3/4 cup butter or margarine, softened (i use melted)
1 cup brown sugar, packed
1/2 cup granulated white sugar
1/4 cup milk
1 large egg
1 tsp vanilla
1 cup flour
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
3 cups quick or old fashioned oats (i use Quaker Oats quick cooking)
1 cup rasins
1 cup coarsely chopped walnuts (optional) (I dont add them)
Preheat oven to 350F
Beat butter, sugar, milk, egg and vanilla in large bowl until light and fluffy.
Combine flour, cinnamon, baking soda and salt in a separate bowl. Gradually add to butter mixture; mix well. Stir in oats, raisins and walnuts if using. Drop by tsps or tbsps onto greased baking sheet (i use parchment paper). Bake 12-15 minutes. (again you know your oven to adjust baking times accordingly). Remove and cool completely. Makes a bit more than 3 dozen. Enjoy!

And this morning i made Chocolate Chip Cookies. Over the years, ive tried lots of choco chip cookie recipes and never really liked them. But this one i started using a few years ago and everyone really really likes them. they are the best! From Nestle Tollhouse choco chips wrapper!
ORIGINAL TOLLHOUSE COOKIES
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup softened butter, margarine or shortening (i use margarine for best results)
3/4 cup white sugar
3/4 cup brown sugar firmly packed
1 tsp vanilla
1/2 tsp water (dont know why only 1/2 tsp)
2 eggs
2 cups semi-sweet chocolate chips (one 12 oz pkg)
1 cup coarsely chopped nuts , optional (i dont use the nuts)
Preheat oven to 37F
sift together flour, baking soda and salt; set aside. Combine margarine, sugar, brown sugar, vanilla and water; beat until creamy. Beat in the eggs. Add flour mixture; mix well. Stir in chocolate chips. Drop by well rounded half tsps onto greased cookie sheets (i use parchment paper). Bake for 10-12 minutes (you know your oven so adjust baking times). Makes about a lot (about 80 2 inch cookies). Enjoy!

This morning i made a Lemon Bread. Last week my daughter gave me 15 large lemons. Someone at her work gave her a case of lemons and she shared with the family. I mean, you can only drink so much homemade lemonade!
The Lemon Bread i made is my mothers recipe and is as old as the hills. For some strange reason, everytime i made this bread, the middle would always, and i mean always, cave in. I wanted to give it another try because hubby loves lemon bread. And surprising enough, it didnt cave in. But it still isnt like my mother made it. Its good but.....
