Didnt bake this, but i made applesauce the other day and we finished it this morning at breakfast. I love homemade applesauce because i know whats in it. We dont add sugar or anything. Its just pure applesauce. Very good on toast.

Refreshing Strawberry shortcake. ( 1 cake mix, 2 tubs of Cool Whip...lol ) At least the 2 clam-shells of strawberries were fresh! Father's Day Cake. We're doing the dinner later on today.

I know I repeat myself, but Jenny Jones! Is there any recipe of hers I have not loved and promoted? Well now we can add her fast pizza dough recipe to the list.

The ball(s) of dough ( I made a double batch ) were puffing up in the plastic wrap as i grated the cheese and got the other toppings prepped. I snapped a before pic but totally blanked after they baked.
I am very impressed with the way these cooked up crispy on the bottom but still chewy and soft inside.
I only baked for 15 minutes....not 20.

Side notes:
I placed 1/2 the grated cheese over the sauce and then added the toppings over that ( red pepper, tomatoes, pepperoni, cooked bacon, pineapple tidbits and chopped Italian Parsley and green onions, ) then I added the rest of the grated cheese on the very top.
Hocus Pocus!! Two round pizza pans transformed into one large rectangle!
o.k. I admit to making another batch of pizza this morning. At least this time I snapped an " after " photo.

In between naps ( both mine and Frankie's ) I made up 2 quick strawberry/rhubarb pies.
( Berries are $1.67 and I was able to pick the reddest stalks of rhubarb from the loose pile at Freshco ) Mmmm.
Does anyone else blind bake their bottom crusts? I've found it makes all the difference in preventing that soggy bottom that often comes with fruit pies.

I love Strawberry Rhubarb Pie. Gonna make that next week after strawberry picking with the grandkids!
This was a labour of love for sure. After watching this video and falling under the spell of her Scottish accent....I just had to make them! Besides, i was looking for something red to make for dessert and since DD had left her clam-shell of strawberries here when she left.....that was my sign!

What a learning curve for me to make these pastry ( ? ) shells. Flour, butter and sugar...no water? Tricky to roll it out, but I persevered. She called it a short crust.
Wait till DH sees these! He loves custard tarts.
Just itching to make something from the limes and blueberries I bought, so I found a recipe for Blueberry Lime Cupcakes.
Unrelated but equally as yummy sounding was a recipe for PB & J Bars ( made with mashed chick peas! )
I'll get busy on them later.
baked some Pillsbury apple turnovers this morning.
got some apples in the cheapie bin at Maxi and made an apple pie with a twist. I used some Anise Seed that i had. tastes different but was very good.
Strawberry Coconut Cupcake with Coconut Milk Cream Cheese Frosting, big long name for such a lackluster appearance, however these impressively moist treats had an explosion of flavour that surprised us all!
The addition of orange and lime zest ( used in both the batter and the frosting ) was brilliant! They called for lemon zest, which I had none of. ( use what ya got! )

Younger DD request was for Oatmeal cookies so made some of those and Blueberry muffin
DD came over this morning and she made us a Lemon Loaf. Came out reall nice. Picture to follow.
