So.. our house is STOCKED with pasta, mostly macaroni. We usually have 3 different dishes we make & it's getting a little.. dull.

So, I am looking for new ideas for pasta dishes. The simpler the better.

I love arrabbiata. This version is a bit spicy but you can alter the heat easy enough.

I made Sundried tomato pesto last night. It was so yummy. I just threw everything in the magic bullet and off we went. I did add a little extra oil because I thought it wasn't coming together well. Topped it with some parmesan and now I'm drooling

    SUN-DRIED TOMATO PESTO

    Makes 3/4 cup (180 mL)

1 cup (250 mL) sun-dried tomatoes packed in oil

1/2 cup (125 mL) basil leaves

About 1/3 cup (80 mL) olive oil (or the oil from the sun-dried tomatoes)

    Salt and freshly ground pepper

Drain the tomatoes. If the sun-dried-tomato oil is good quality, use it to make the pesto. In a food processor, pulse-chop the tomatoes and the basil. (At this point you can added extra flavourings, such as 1/4 cup (50 mL) grated Parmesan or Pecorino cheese, 1/4 cup (50 mL) pine nuts or toasted almond batonnets, a pinch of chopped garlic, or a dash of hot pepper paste)

With the motor running, gradually add the oil until the paste is well mixed but not chopped too fine; you want to maintain a slightly chunky, toothsome texture. Season to taste.

Like robert12 said, pasta salad is great! I make different variations. My favorite is a "greek" pasta salad- use any kind of pasta you have on hand (I like the spiral ones), red onion, black olives, feta cheese, and greek salad dressing.

Another huge favorite, and total comfort food, is tuna casserole! Macaroni noodles (cooked), one can of tuna, a can of peas, a can or 2 of cream of mushroom soup (or any "cream of" soup), a few handfuls of grated cheese, and topped with crushed potato chips or crackers (crushed up cheese ritz crackers is really good) or bread crumbs... bake at 350 degrees for about half an hour or until it's all gooey and bubbly You can add any other spices or extras that you want- it's a really versatile dish!

I originally got this recipe from Patricia Wells' Trattoria book, it became a staple in my repertoire so quantities may not be what the recipe called for. Try this one and adjust according to your taste.

    1 pound of pasta.
4 oz bacon or pancetta, chopped
2 small jars of marinated artichokes, drained
4 to 6 fresh plum tomatoes, chopped. (Canned tomatoes can be used, but they need to be drained first.)
    Parmesan cheese
    Fresh parsley

    Cook pasta according to directions.

While pasta is cooking, in a frying pan, cook bacon or pancetta until fat has rendered and bacon/pancetta is crisp. Remove bacon from pan and drain on paper towels. Drain some of the fat from the pan, but leave about one to two tbsp (to taste). Add drained artichokes and plum tomatoes. Cook until tomatoes start breaking down.

Drain pasta and put in big mixing bowl. To hot pasta add the bacon, and artichoke/tomato sauce. Mix well. Garnish with lots of parmesan cheese, parsley and black pepper.

This dish is more of a "dry" dish in the sense that not all the pasta will coated as in spaghetti and meat sauce, but the flavours will come through.

Not fancy, but comforting, is garlic butter pasta sprinkled with parmesan and black pepper. You can buy the garlic butter available at the grocery store, or you can melt butter and infuse it with one or two chopped cloves or garlic.

Pasta with one or two tablespoons of pesto is a no-brainer, especially with all the ready-made pestos now available.

Love all the recipes! Another "comfort" thing is a big bowl of hot macaroni with lots of butter and Kraft parmesan cheese Or even a big spoon full of cheez whiz!

My version of home made macaroni and cheese, I do not have exact measurments because it is all based on the creamer you like it

    But these are the ingredient

pasta (elbow noodles are the best)
cheese ( not cheese whiz or anything of that nature)
    cream of mushroom soup
if you want a crunchier top you can add crackers to the top ( basically use any that are on hand)

this is a very versatile recipe, you could add bacon, chicken, ham, veggies, or ground beef
