I was at a social this weekend(it's a Manitoba thing) and they served the most amazing Greek Pasta Salad. It had penne pasta, tomatoes, cucumbers, olives(which I picked out because olives are one of the few foods that I don't like), peppers, and a bunch of feta. Not sure what the dressing was though. Googled and found a few possibilities but I don't like making something off a website without recommendations. A healthier version would be even better.

was it a creamy dressing or a vinaigrette?
for a vinaigrette I would use
1/4 cup white wine vinegar
1/4 cup lemon juice
1/2 teaspoon dried oregano (could use fresh but I'm not sure how much it would need)
black pepper to taste (1/8-1/4 teaspoon)
1/2 cup olive oil
then just use the ingredients you listed above.
to make it healthier I would use while wheat or veggie pasta, add tons of veggies and go easy on the cheese or use low fat feta.

i use red wine vinegar, olive oil, garlic and oregano for my standard greek dressing.

We have 2 restaurants in my area that are run by greek families and my daughter works at one. They make wonderful greek salads and they say their dressing is a secret. HaHa
The secret is they use Italian salad dressing and add more oregano to it and honestly it is the best I have ever had.

Ingredients- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 3/4 teaspoon ground black pepper
- 3/4 teaspoon white sugar
- 2 1/2 cups cooked elbow macaroni
- 3 cups fresh sliced mushrooms
- 15 cherry tomatoes, halved
- 1 cup sliced red bell peppers
- 3/4 cup crumbled feta cheese
- 1/2 cup chopped green onions
- 1 (4 ounce) can whole black olives
- 3/4 cup sliced pepperoni sausage, cut into strips
Directions- In a large bowl, whisk together olive oil, vinegar, garlic powder, basil, oregano, black pepper, and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, green onions, olives, and pepperoni. Toss until evenly coated. Cover, and chill 2 hours or overnight.

I make a Greek Pasta Salad every year for our family reunion.
I use cucumbers, tomatoes, olives, red onion, red pepper (or green), celery, artichoke hearts (chopped), feta cheese, and Kraft light Greek Salad Dressing. For the pasta I choose rotini or fusili because I love the shape and how the veggies and cheese get caught in the spirals. I make it up the night before so that the flavours get to know each other and then if I need more dressing I add it in the morning before we head out.Last edited by Irie at CN; Tue, Jul 31st, 2012 at 05:48 PM.
