Whole wheat will definitely make a denser banana bread and it may come out a little drier. It's great though! I only use the whole wheat recipe. I can't remember if I use applesauce as a replacement for butter/oil. That would increase the moisture and cooking time. I'd have to check my recipe!
I was thinking your oven might also be stronger/hotter than you think. Try taking it out less than ten minutes before it's supposed to be done and test it. The longer it overcooks, the drier it gets.

Recently I have been using rolled oats in place of half of the white flour in banana bread-it is tasty and healthier.

This is a great recipe that sneaks an extra banana in for extra flavour without making it dense or heavy. The trick is to microwave the bananas to draw liquid out, then reduce that liquid to a syrup. It's a small extra step that makes a real difference . Just be careful it doesn't boil over in the microwave!
I've only made this twice, the second time I added chocolate chips, but I forgot that my bananas/syrup were still hot, and I ended up with banana chocolate swirl bread. It was actually ok, but if you like chocolate chips in your banana bread, don't forget to let your bananas cool!
