Just made a HUGE batch of hamburger parmesan cassarole. A double batch for the oven and two into the freezer. Does anyone else batch cook?? Favorite recipes if so?

I always have grand plans of doing so... but then never get around to it. Would like to try and find some "healthy" crock pot or batch dinners so that I can just toss it together in the morning, ready and waiting when I get home. However.... I need another freezer as mine's full of MM juice, Europe's Best fruit & veg, and homemade pasta sauce... (ok.. and leftover Easter chocolate too!)

I do some batch cooking, but have a small freezer so not as much as I'd like to. I've done burritos for lunches, and meatloaf, always have that in the freezer lol, along with just browned ground beef that I can then turn into other things, saves time when I make lazy cabbage rolls in the crock pot or lazy lasagna (yeah I'm a lazy cook lol). I got a freezer cooking cook book and love some of the tips in it. But I really like my crock pot book, it gives a recipe for basic chicken then 4 or 5 recipes for what to do with the leftovers... does that for pork, beef, chicken... so it's great! Though right now my son is having frozen peas for supper... still frozen btw...

oh, and I don't watch the shopping channel much but do buy from them way too often, just ordered a watch this morning, which is the first thing I've bought from them in like 3 months! I tend to get their showstoppers if I buy anything, and get that emailed to me every morning. The watch was apparently popular since it was only left in one colour when I bought it this morning, and is now sold out! I got my son's mattress set from them too, they have one for kids that is blue or pink and one side is water proof!! I love that cause we have a lot of leaks lol. And I like the multiple payments (no interest). Lets me spread out the purchase if I haven't saved up enough for the whole thing right away. Any way! It's not for everyone lol.

Awesome! how do you do the lazy cabbage rolls in crockpot?? I make a big batch freeze it in pans and the bake in oven..we would eat lasagne in an form! Tim;s zagne is lazy too!

1 block softened cream cheese
1 500mL container sour cream
1 - 2 chopped green onions

Combine in bowl until well blended and smooth, spread evenly in glass baking dish.
Spread salsa over top of mixture.
Cover with 300 - 500 g shredded medium cheddar cheese (Normal people would probably use half a block; we are cheese loving people and I use one full block).
Sprinkle with 2 -3 chopped green onions.
Cover and chill for 30 minutes.

Serve with Tostitos Scoops

Oh MY Missbee I made this Tuesday night for a pot luck lunch Wednesday, I split it and we had it after my kids life gaurding class, It is soooooooo good, my kids actually packed it for lunch. I went to get the left over I had brought home from the lunch and it was gone I think they ate it for breakfast. I am heading to the store tonight to buy more ingredients YUMMY thanks for sharing.
