I saw a neat apple pie recipe on pinterest where they hollowed out apples and used them as crust, filled them with the filling and then just had a few strips of pie crust on top. Much more of a low carb alternative, and you could use stevia in your filling instead of sugar. I'll try to find a pic...

Found it! Those look delicious to me! :) It was one of the first few that came up when I typed in apple pie.
Had eggless noodles with steamed cabbage and red peppers fresh from the farm yesterday. Boy did that cabbage go crunch when I cut into it :P
Since I started yesterday, no lost no gain. I will check back next week.
Had sweet n' sour tofu and veggies stirfry tonight. Yummy :-)
A great big fat (pun intended) 0 lbs lost. I'm guessing it didn't help that I started back to work after nearly a month off and I'm now once again surrounded by food :rolleyes:. I will, I PROMISE, make an honest effort this week :biggrin:.

For a snack I'm melting 85% good quality dark chocolate with pumpkin seeds, almond slivers, craisins, and anything else I can find in the pantry. Pouring it onto a cookie sheet and letting it set, then breaking it up into pieces. mmm (i like to eat chocolate and this is a way to make it feel like i'm eating more of it)
