Kissing in the Clouds..(cookies)
2 Egg whites, at room temp. 1/8 t Salt 3/4 c Sugar 1/2 t Almond extract 1 1/2 c Flaked coconut 2 c Popped popcorn, finely -crushed in blender or food -processor 1 T All-purpose flour 1 t Unsweetened dry cherry- -flavor drink mix (opt) 16 Chocolate candy kisses
Instructions
From Orville Redenbacher Popcorn.
1. Preheat oven to 300'F. Lightly grease a large baking sheet.
2. In medium bowl, beat egg whites with salt until soft peaks form. Gradually add sugar, beating continuously, until stiff peaks form. By hand, fold in remaining ingredients, except candy kisses, just until all ingredients are moistened.
3. Drop by rounded tablespoons, 2" apart, on baking sheet. Bake at 300'F. for 7 minutes or until set. Remove from oven and immediately gently press a candy kiss in center of each cookie. Return to oven and bake an additional 8 minutes or until golden brown. Cool on cookie sheet for 1 minute, then remove to wire racks to cool. Makes 16 cookies.

Pastel De Manzana - Apple Mint Crisp Recipe

Ingredients
1 tb Butter, softened 1 c Sugar 1 c Flour 1/2 ts Baking powder 1 Egg 1 tb Dried mint leaves 1 tb Ground cinnamon 4 md Cooking apples, peeled, -cored and cut into 1/4" -slices 1 c Heavy cream, whipped
Instructions
1. Preheat the oven to 350 degrees F. Coat the bottom and sides of an 8'x8"x2" baking dish with the butter. Set aside. Combine the sugar, flour, and baking powder - sifting them together into a bowel. Make a well in the center and drop in the egg. Mix together until the egg is absorbed into the flour. In a large bowel, mix together the mint and the cinnamon. Add the apples and toss until the apples are coated.
2. Arrange the slices in the baking dish and scatter the flour mixture over them, spreading and pressing gently to cover the apples completely. Bake in the oven center for 45 minutes, or until the top is crusty. Serve at room temperature accompanied by the whipped cream.
