Taco Casserole
1 7oz. bag Nacho Cheese Doritos, crushed
1 lb. hamburger, browned
1 pkg. taco seasoning, mixed according to directions
1 (8 oz.) pkg. shredded Cheddar cheese
1 (8 oz.) pkg. shredded Mozzarella cheese
Shredded Lettuce
Sliced tomato
Layer ingredients in 9 x 13 pan as listed - crushed chips, meat and seasonings, 2/3 of cheese, lettuce, tomato, and remaining cheese. Bake at 350 degrees for 15 minutes.

SLICED BAKED POTATOES!!!
Preheat oven to 400 degrees (Can also do in Microwave for 6 plus minutes)
Brush both side of potato slices with butter; place them on a cookie sheet. Bake in the preheated 400 degrees F oven for 30 to 40 minutes or until lightly browned on both sides, turning once.
When potatoes are ready, top with bacon, cheese, green onion; continue baking until the cheese has melted;
Add a dollop of sour cream when done and enjoy!!

If you roast your potatoes naked – without foil wrapped around it – you’ll get a wonderful browned crust with super fluffy soft flesh inside and if you’re a potato skin eater like me, you’ll be in potato heaven.
Here’s what you’ll need:
(Makes 4 servings)
4 medium russet potatoes, scrubbed and dried
1 tsp olive oil
pinch each salt and pepper
Prick potatoes with fork and rub with oil; sprinkle with salt and pepper. Bake on foil-lined rimmed baking sheet in 400ºF (200ºC) oven, turning once, until potatoes are tender, about 1 hour. Let stand for 5 minutes before serving.
Tip: Try this with sweet potatoes – they cook faster than other potatoes, so check at the 30-minute mark.

Creole Salmon Cakes with Hot Mayonnaise
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 4
Ingredients:
3 6 ounce cans salmon, Alaskan, wild caught
1 1/2 cups Ritz Crackers, crushed
1 cup Best Foods mayonnaise
1/4 cup panko bread crumbs
1/4 cup red onion, minced
1 stalk celery, minced
1 jalapeno, minced
2 teaspoons brown mustard
1 teaspoon black pepper
1 teaspoon creole seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
extra virgin olive oil
For the Hot Mayonnaise:
1/2 cup Best Foods Mayonnaise
1 tablespoon hot sauce
pinch of black pepper
Directions:
Drain salmon and set aside. In a large bowl add crushed crackers, minced vegetables, all the spices, mayonnaise and mustard, mix well. Fold in salmon and panko bread crumbs.
Form into 4 patties or you could make appetizer size if desired.
Heat about 4 tablespoons of olive oil in a skillet over medium heat, add patties in brown for about 4-5 minutes per side until nice and golden brown.
Patties can also be placed under the broiler and cooked for about 8 minutes per side.
Drain on paper napkin.

Turkey Cucumber Rolls
These look like a great lunch!!
ingredients
1/4 cup chopped cucumber
4 tablespoons softened cream cheese (can use low fat)
3 large flour tortillas (you can use low carb wraps)
1/4 pound sliced smoked turkey breast
Directions
Stir cucumber into cream cheese, spread on tortillas, layer with turkey slices and roll up
Can also slice these into smaller "bite size" for a party tray

Baked Potato Casserole

Ingredients
15 medium to large potatoes
1 bar (600 g) Cheddar cheese
2 containers (500 g) sour cream
1 bunch green onions
1 pkg (500 g) bacon
1/2 tsp (2 mL) each of salt and pepper
Preparation
Bake approximately 12 to 15 potatoes. When done, mash into a glass casserole dish. Add 1 500 g pkg diced cooked bacon with juices, 1 whole bunch of green onions diced, 2 500 g containers of sour cream, 1/2 brick shredded cheddar (300 g), and salt and pepper. Cedar Planked Salmon with Dill Sauce

Ingredients- 2 salmon fillets, (about 1lb/500 g total)
- 2 tbsp (30 mL) olive oil
- 1/2 tsp (2 mL) grated lemon rind
- 2 tbsp (30 mL) lemon juice
- 1 tbsp (15 mL) chopped fresh chives or green onions
- 2 tsp (10 mL) Dijon mustard
- 1 pinch salt
- 1 pinch pepper
Dill Sauce:- 1/2 cup (125 mL) sour cream
- 2 tbsp (30 mL) finely chopped cucumbers
- 1 tbsp (15 mL) chopped fresh dill, (or 1/2 tsp/2 mL dried dillweed)
- 2 tsp (10 mL) minced fresh chives or green onions
Preparation
Pinch each salt and pepper Soak two 12- x 7-inch (30 x 18 cm) untreated cedar planks in water for at least 30 minutes or for up to 24 hours. Place 3 salmon fillets on top of each plank.
In small bowl, whisk together oil, lemon rind and juice, chives, mustard, salt and pepper; brush some over salmon.
Place planks on grill over medium-high heat; close lid and cook, brushing with remaining lemon mixture for about 20 minutes or until fish flakes easily when tested with fork.
Dill Sauce:
Meanwhile, in small bowl, combine sour cream, cucumber, dill, chives, salt and pepper. Serve planks on platter with dill sauce.

Cheddar Cheese and Potato Cabbage Rolls

Ingredients- 2 lb (900 g) potatoes, peeled and chopped
1/3 cup sour cream
3 oz (85 g) double-smoked or regular bacon, chopped
2 onions, chopped
Pinch salt
1 Savoy cabbage
1-1/2 cups shredded extra-old to 3-year-old Canadian Cheddar cheese
1/4 cup chopped fresh parsley
1/4 tsp pepper
2 tbsp butter, melted
Preparation
In saucepan of lightly salted water, boil potatoes until tender, about 18 minutes; drain and return to pot. Cook over low heat until potatoes are dry, about 1 minute. Remove from heat. Mash with sour cream until smooth.
Meanwhile, in small skillet, fry bacon over medium heat until just beginning to brown, about 3 minutes. Add onions and salt ; fry, stirring often, until golden, 12 to 15 minutes.
Meanwhile, in large pot, bring 1 inch (2.5 cm) salted water to boil over high heat. Separate at least 16 leaves from cabbage (reserve inner small leaves for another use). Add to water; cover and steam until tender, 6 to 8 minutes. Drain and rinse under cold water; drain well. Cut v-shaped notch at base of each leaf to remove thick core.
Fold bacon mixture, cheese, half of the parsley and pinch of the pepper into potato mixture. Place about 1/4 cup filling at base of each leaf and roll up. Arrange rolls in single layer in lightly greased 13- x 9-inch (3 L) baking dish. Sprinkle with butter and remaining pepper. Cover with foil. Bake in 375°F (190°C) oven for 40 minutes. Uncover and bake until tops are light golden, 10 to 15 minutes. Sprinkle with remaining parsley.
