Thread: i got a cheesecake disaster today! sad....

    Today I decide to make a berry cheesecake so I can use up the left over sour cream and frozen berries. is my first time trying the recipe with berries.......and it was disaster.........sigh........everything seems normal as usual until I took the cake out of the fridge after it was chilled for awhile. when I take it out of the mould, the whole thing fell apart. the inside somehow was still soggy, looked kinda like uncooked, but I have baked it for more than the suggested time already, and I have always bake it for that long, so I m 100% sure its cooked. I dunno what happened, the only thing I can think of are the frozen berries was extracting too much liquid while it was being cooked. and it cause the whole cake to be soggyy. Anyone had this happened when frozen berries are being used in cheesecakes? any suggestions on what I can do with the mash up cheesecake I got now???

    i hope it will firm up a bit over night. just did some research on how to deal with a cheesecake mess. the only way to save it is to make cheesecake pops with them, but only if its firm enough. but if its still soggy, than ice cream it will become.

    I have never cooked a cheesecake with fruit toppings. I always put the toppings on after I cooked the basic cheesecake. I think you are right. The liquid from the frozen berries (and there will be a lot) seeped into the cheesecake and made it too moist. I don't think there is a way to salvage it. So sorry.

    Cheese cake pudding? Just mixed / mashed the cheese cake up and scoop it in a small dessert cup (waffle cups, ramkin dish?), put chopped fresh fruits / jam / chocolate syrup on top.

    (Advice from someone who've never baked a cheese cake in her life)

    i think it was the berries next time defrost the berries first and let them drain of any extra liquid all that extra liquid from the berries would have made it not cook properly and fall apart. as for what to do with it now i really dont no... if it were me i would throw it out because i would not feel that it was cooked properly (because of the added liquid)... i hate to waste but since there are eggs in cheesecake (im assuming ur recipe does as most do) i would rather throw it away than tempt any illnesses from the eggs. but thats just me, if it were anything else i would say re use it make it into ice cream or something but i dont mess around when it comes to eggs. sorry good luck next time

    It's the frozen berries. You need to thaw them and drain them fully before using them.

    yes, i figure that, i used a piece of paper towel to dry it out as much as i could...thought that was good enough, but it wasn't, big lesson learned, never use frozen berries inside a cheesecake or any other cakes...
