Grilled cheese sandwiches
I truly enjoyed a pork chop DH made for me while he was making up a batch of crumb coated ones for him and DS. he made mine with no crumbs and just the no salt seasonings I am using. It was delicious! had it with some of my " veggie creations " that I saute in a thin coating of egg whites with herbs.
Even leftover they come up to crispy again in the air fryer!
A big lemon herbal tea after.
Today will be a toasted roast beef sandwich.....I am starving now and want it now! But I need to wait till after 12:30 or I will be starving this afternoon again lol
I filled an 8 x 11 pan with ( Dr Poon approved ) Shepherd's pie ingredients. Smoothed the mashed cauliflower all on top, but no time to bake it, I had to tear off to the dentist. No biggie though...baked it when I got back. Mmmm never even let it set!
I scooped out a serving hot from the pan!

today's first meal ( I am doing I.F. ) was at 2:30 p.m. today and has worked so well for me.
Bowl of homemade roasted red pepper soup, a seafood treat which consisted of the meat from 3 crab claws ( added 1 tsp butter ), 4 tiger shrimp ( added 1 tblsp of red
cocktail sauce ), 2 fillets of cod pan sauteed along with thick Cremini mushroom slices,
a large salad ( 6-7 cups of mixed greens ) a combo of arugula, spring mix, and garden salad dressed with 2/3 cup mixture of low calorie ranch and Italian dressing.
Two store bought cups Jello ( 5 cal each ) and a Tassimo mug of Cafe Crema with 2 tblsp of lactose free whipping cream stirred in.
Still stuffed, not sure when that 2nd meal will be. I know someone who is doing OMAD !!!
( That stands for One Meal A Day! ) Yikes...that is not even a consideration for me.

Perch fillets sauteed with slightly steamed snow peas. Diced baby cucumbers in low cal ranch dressing with toasted almond slices. Two Jello cups and a Cafe Crema ( Tassimo )
Yesterday I went home for lunch and made a toasted roast beef sandwich. Today.... I don't feel like anything in our fridge lol. I may treat myself to a salad at the deli downtown.
Rare moment of hunger for me came earlier than usual today. My first meal was before NOON!
But then I just rolled with it.
Had a large serving of the pureed fennel/zucchini/spinach soup I made yesterday, along with a raw veg wrap cut in half, filled with slices of Bocconcini cheese that I sprinkled liberally with pepper and fake salt and then pressed in the Quesadilla grill to melt.
Also had 2 baby cucumbers sliced up with a bit of creamy dressing, a cafe Crema ( Tassimo style ) and 2 cups no sugar added Jello.
So far all of that has kept me satiated. Dinner at 7 will be another adventure.
Bought 2 bags of a new ( to me ) pasta replacement . I have eaten many pkgs of Nu-Pasta but wanted to stay away from anything soy, and this root veggie ( konjac ) one fits in great! ( Also it is Dr. Poon approved )
Since I am still not eating ANYTHING tomato, the sauce has always been a challenge for me.
Today I solved that.
First I increased the volume of the spaghetti styled noodles by adding finely diced and sauteed mushrooms, onions, bell peppers and zucchini.
Mixed in a full cup of fresh chopped dill weed along with 1/4 c of fresh Thyme leaves ( slow work to pick all of them off the stems ) and then heated all of it together adding a few scoops of my roasted red pepper/cauliflower pureed soup.
It was just as thick as any sauce would have been, and has a cayenne pepper kick!

I dug all the meat out of what remained of a small bag of frozen crab claws, and the last very small lobster tail remaining in the deep freeze. Oh boy....a seafood pasta lunch that came out of nowhere!
It was not really planned but sometimes these meals create themselves......ha ha
Had half for my lunch today, the rest I'll enjoy tomorrow maybe.

Rainbow trout. ( the whole fresh fish was just $5.00 at Sobeys )
I was thrilled the head and tail portions were cut away. A thick fish too, the skin crisped up so nice in the pan, the bone in the middle lifted out easily once it was cooked through the centre.
Ate a portion of it along with gently sauteed fresh bean sprouts and sliced cremini mushrooms.
A single coffee which went down so smoothly!
I'll have the rest of the fillet for tomorrow's lunch.
