    what an incredibly delicious sounding lunch @lizzie bargain ! Ikwym about the size of the portions. Many, many times we bring 1/2 of our restaurant
    entrees home, that is another complete meal the next day.

    Today I prepped a Tortellini Cold Pasta Salad. DH loves tortellini warm as a pasta meal, but he also loves making cold pasta salads so I thought this could
    scratch both his itches.
    Just to be funny I mixed the some of the dressing ( EVOO, lemon juice, white wine vinegar, dried herbs, S & p and a smidge of pure maple syrup ) into a
    portion of the mixture to have for dinner. I labelled it in the fridge as such.
    The remainder of the mixture I labelled " Naked and Afraid " with the bottle of dressing beside it.

    I keep forgetting how delicious spaghetti squash is. Versatile, inexpensive ( when on sale) and yields quite a bit when cooked.
    The mixture that I ate at lunch on both Wednesday and Thursday consisted of just 1 cup of the scraped insides of a squash,
    3 oz. extra lean gr. chx., sauteed and mixed with diced onions and mushrooms. De-glazed the pan with 2 Tblsp red wine, mixed
    in chopped cilantro and basil leaves.
    It came out to more than enough of a serving! Only costs me 210 calories and was very filing.

    made a homemade mushroom soup. Cooked everything, then pureed it adding coconut milk into it at the end.

    Tried Dumpling squash. ( see pic ) today . Considered a sweet squash, I've never seen these before.
    Baked on a pan at 415 for about an hour. It was delicious, but I could only eat one half. I'l grab a few

    of these for our Thanksgiving meal, they're similar to the Delicata squash in that you can eat the skins.

    A friend gave me a leek so I tried making leek and potato soup using this recipe. I only had one leek but with the onion added as well it turned out fine.
    It was absolutely delicious..we were both shocked that we'd never tried potato leek soup before.

    @crafter Strange but true ...I have never bought Leeks. Ever. So of course have never cleaned any, heard it can be a sandy nightmare if not done thoroughly.
    Your soup recipe sounds dreamy! I love blended soups.

    Your soup recipe sounds dream Yes the sand scared me too...as well as the price, I've frequently had a bunch of 3 leeks in my hand ($3.99) and then put them back. No probs buying a bag of pretzels for $4.99 though lol..go figure. Well it's about time you tried to use them. They taste like mild onions...just think of a big green onion. They are honestly beautiful to cut up..Cut in lengthwise and then thinly crosswise. A youtube video showed to shake them in a bowl of water to remove the sandy grit. I had no issues..here's one that shows what to do.

    I was feeling edgy today, REALLY wanted some of the Extreme Ranch Hard Taco shells. They are really not on my weight loss
    diet BUT, I mixed 40 grams of Lemon Pepper Rio Mare tuna with 2 tablespoons of plain Greek yogurt ( instead of mayo ), added
    fine diced apple and spread it over3 flat pieces ( 22 grams total ) of the crunchy delicious shells. For a laugh I placed some of my
    homemade spicy oven roasted chickpeas on the top of the mixture. How tasty was it? Amazing!

    @crafter This spicy roasted chickpea recipe was part of a baked sweet potato topping.

    Here is JUST the Spicy Chickpea recipe

    Crispy Spiced Chickpea: Position racks in top and bottom thirds of oven;
    preheat to 425°F. Line a large baking sheet with parchment paper.
    Toss the contents of a 540 ml can of chickpeas that were drained,
    rinsed and patted dry with 2 Tblsp. EVOO to coat. Arrange them in a single layer
    on the parchment; bake in top third of oven, stirring halfway through, until crisp,
    about 45 minutes.
    Stir together 2 tsp. garam masala, 1/4 tsp. cayenne pepper and 1/4 tsp. salt;
    sprinkle over chickpeas and stir to coat. Return the pan to the oven; bake for
    5 minutes. ( I baked mine a bit longer for extra crunch )

    We ate in a Chinese restaurant in Hong Kong that our guide took us too-quite delicious.
