Here, homemade bread doesn't last long enough to go bad...
Same with fresh bakery bread as well.
I don't like how frozen bread tastes after, so I don't do that.
I just keep fresh bread in a plastic bag, closed tightly.
Yay to you for baking!
Honestly, I don't bake bread often because I would make bread or buns and POUF it would all be eaten. My husband can down a loaf pretty quickly.

I hear you on this Toban! I dusted off my bread machine awhile back, after my DS wanted a piece of moldy bread for a science experiment. I think it's been about nine weeks since i left out that slice of Bens bread, and while it is kind of hard, not a speck of mold. So I mix the dough in the machine and bake in the oven (since I don't like the shape it turns out in the machine).
I normally put it in a Ziplock bag after it cools (make sure it's completely cool so you don't end up with steam in the bag that gives you a squishy crust). I keep it on the counter for maybe two days, then it goes into the freezer. We make toast out of the freezer ones, sometimes sandwiches when I'm packing lunches early in the morning, it's defrosted by lunchtime. I don't find too much of a flavour difference storing in the freezer, it's never there long anyhow.

Thanks Zonny! I made the recipe below. I used 4 cups of white flour and 2 cups of whole wheat flour. 1 Tbsp yeast. Added 1 Tbsp flax seed. 8.3 inch loaf pan. The rest I made into buns.

Sometimes storing it in a paper bag helps.

It's really a tough question. I don't like putting fresh bread into freezer, because its taste won't be OK.

I don't make it often but when I do, I keep it in the fridge for a few days, then in the freezer it goes! I mainly use it for toast so it isn't a pain to thaw.

I have been making bread for years and have no problem freezing it in any type of plastic bag. I might take it out of the bag to defrost though.
