Besides beet salad and pickling them, is there any really great recipes for beets that you guys know of?

You can roast the beets or boil them place them in a food processor with salt pepper and goat chesse and you can use store-bought fresh lasagna sheets and make ravolis and use the beet goat cheese as the filling

I just made a big pot of borscht. My children usually pick out all vegetables, but they'll eat beet soup...go figure.
If you want to use up some beet leaves, look for a Ukrainian recipe that is basically pieces of dough rolled up in beet leaves and cooked in a cream sauce. Not diet food, but definitely something to try before you die, lol.
