Our Lent, in the Byzantine Rite, starts today, so today is a fasting day.
So looking forward to tomorrow, as is our son. Pancakes aren't something he cooks for himself.
I didn't grow up with having Pancake Day.
It wasn't until our son was in school (Roman Catholic) that he'd mention that 'everyone else' had pancakes that day - and I found out about it, so started doing it.Last edited by Natalka; Mon, Feb 8th, 2016 at 01:31 PM.

That's what I'll be making for supper - will decide later if I'll add anything else... scrambled eggs and fried potatoes, maybe? My men like 'breakfast' food.

Thankfully our school does pancakes for lunch (extra cost, ordered from a local restaurant). The kids love it.

None taken, Dave. They're really very good!! I just use my stick mixer to smoosh the cottage cheese up, add splenda, cinnamon, some flour to bind it, an egg, salt...and they're sweet little pancakes!! The thought of eating a handful of flour and milk just can't compare and my thighs love me for it!

Best combo of cottage cheese and pancakes is nalysnyky! Thin pancakes (thicker than crepes), rolled around a mixture of dry curd cottage cheese mixed with egg, dill, s+p, baked in whipping cream and butter, served with sour cream.
Sigh, they are delish! - I only make them once a year (for obvious reasons).

Pancakes and bacon for dinner. Yum. I had salad for lunch so had room for the pancakes, skipped the bacon. My youngest added chocolate chips. So he was very excited.

We had "from-the-box" buttermilk pancakes made with soy milk and topped with maple syrup (not processed 😊, blueberries and bananas. YUM! (But I am feeling a little yuck- not used to this amount of flour and sugar etc.)

Hahahahaha......oh, yes, they are wonderful; everyone's favourite around here. Unfortunately they and foods like them are one reason I'm ON this diet!! LOL!! One day I'll make them again for everyone, but it seems we're all eating more healthy now, so I have no idea when that'll be. Nothing like food swimming in butter and sour cream!
Avon, once off those heavy foods, what a difference it makes, eating it again, huh? That bloated, ugh, feeling as the flour and milk congeal in our tummies and turn to cement........maybe not an exact analogy, but it sure feels like it, doesn't it? I actually prefer my cottage cheese pancakes...they taste like cheesecake!
And how is everyone doing this wintery day? I see some of you southerners got a slight taste of what's going on up here. Honestly, much more snow than we've had in at least 2 years! Hateful crap will probably want to over-stay its welcome and not leave until June!! So yucky...I want February over!!!
