Ii just had a late dinner

Coyote Scramble

3 Eggs
1 oz lean chopped ham
1/4 cup scredded low fat cheese
1/4 cup black olives
Franks Red Hot Sauce
Garlic

Was very tasty and not so many points

mmmmm......sounds good!!!
i made a perogy casserole

15 lasagna noodles (cooked and drained)

Mix in one bowl
1 egg
2 cups cottage cheese
1/4 tsp onion salt

Mix in another bowl
2 cups mashed potatoes
1 cup medium cheese (shredded) (i just use kraft shredded cheese)
1/4 tsp salt
1/4 tsp onion salt
1/8 tsp pepper

Fry together (about 10 mins until onions start to go translucent)
1 onion chopped
1/2 cup margarine ( i cut it down to 1/4 cup cuz hubby said it was too greasy)

you will need a 9X13 pan and will layer as such

1. 5 lasagna noodles
2. cottage cheese mixture
3. 5 lasagna noodle
4. potato mixture
5. 5 lasagna noodles
6. onion mixture

( i will also fry up a package of bacon and put it on with the onions)

bake in the oven for 30-40 minutes at 350F


it is so yummy and we also use sour cream with it once it is done!!!!

well goodnite all!! i am off to bed as i have to be up early to get ready to be out the door and on my way to the city once i drop the oldest off at school. it is gonna be a rough day in our house i think as the wee man is going for a quick little boy surgery. makes me cringe thinking about it but will be all good in a couple of days.

On the advice of my Aunt I went and bought a couple of Hungry Girl cook books (she is a lifetime member of WW and has been super successful) she has a website that you can visit that shows color pictures of each recipe that is in the book with the WW pointsplus values listed with each one!! I'm super excited, and the food looks awesome! I think it may just be the inspiration I need

Good Morning..... just a couple of facebook giggles above that I saw this morning, woke up with a headache and the pity one fit me perfect. Especially when dh is absolutely DYING this time and might not make it because his knee hurts and he thinks he has gout in his toe, so why bother mentioning my problems they obviously would never match up to his.. AND Asking me to 'stay close to home' today because he might want me to pick him up if he is in too much pain. WELL BUDDY (yes, this rant again) I HAVE ONE DAY OFF THIS WEEK, TODAY AND IF YOU THINK I AM WAITING AROUND ALL MORNING FOR YOU, I HAVE NEWS FOR YOU. ugh, men are such babies. another rant over. Oh and he didn't sleep at all last night because of the pain.... was that between the bouts of snoring that kept me up?

Off to get a crapload of groceries because we have up to 50cm of snow coming this weekend. I am working dayshift and plan on packing a bag with extra clothes and food to take with me Saturday, I have a feeling we might be spending the night. Michelin never closes... well they did ONCE for 8 hours during White Juan. Anyways.... big excitement in the maritimes about the big Nor'Easter coming.

I have a vacation day booked this saturday (one of the few vacation days I get) as a friend of mine is getting married. I feel really bad for her, as this storm is probably stressing her out. Had arranged for my kids to stay at Nanny and Poppa's, too. Now we'll probably all be snowed in our house for the entire weekend......she had a lot of time to plan her wedding, why wouldn't she pick a day when it wasn't snowing, lol?
