Beer and Bacon Mancakes Recipe

INGREDIENTS:
1/2 lb bacon (8 slices)
1/3 cup packed brown sugar
2 cups Bisquick Mix
1 cup of your favorite regular or nonalcoholic beer
2 eggs
DIRECTIONS:
1. Heat oven to 350°F. Line cookie sheet with foil. Place wire rack on top of cookie sheet. Arrange bacon in single layer on top of rack. Bake 10 minutes.
2. Sprinkle bacon with half the brown sugar. Bake 10 minutes longer. Turn bacon over; sprinkle with remaining brown sugar. Bake 10 to 15 minutes longer or until golden brown. Remove from rack. Cool completely, about 15 minutes. Crumble bacon into small pieces; set aside.
3. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with vegetable oil or shortening.
4. In medium bowl, beat Bisquick mix, beer and eggs with whisk until blended. If batter is too thick, add additional beer until desired consistency. Stir in bacon. Pour by 1/2 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden brown.

Well on the Certificate it says April 1st to June 30th or September 1st to the end of October. So now they are telling me you cant book in April now its May to June or September to October.....Really why would I want to go somewhere tropical when it will be nice here.....that is it they just want you to go when no one wants to go. She told me the resort is not taking reservations, however when I went to the trip central website and put in for the date in April I was very easily able to book it....hmmmmm

That's a drag Kittenpurfectt, I know what you mean, if it says April 1st on it should be April 1st on! I was lucky with mine it was November to November. Anyways, it will still be a nice free trip even if you can't go when the weather is crappy here, it's still somewhere nice and different! I would look into May as summer is just starting here and you have to watch out for hurricane season in the fall
