I have leftover pasta defrosting for tomorrow as my husband is having a hip replacement so the day will be busy enough.

Tried something new using whatever I could find in the kitchen.
Tonight I took four chicken breasts and cut each one into three long strips like chicken tenders. Then I mixed it with olive oil and hot Texan spice, 2 tbsp of fresh garlic, 4 tbsp of Korean spicy red pepper paste, and then I added seasoned Parmesan breadcrumbs. I made them in the air fryer and they came out absolutely amazing. I used Caesar dressing as a dip for them.

@mulock ! You must love the hot and spicy eh? The chicken inventions you made sounded very good, Air Fryers are like Magic.
I did something quite silly about 20 minutes ago. I was layering the items into a casserole for the oven. A Mac 'N Cheese using
both cheddar and some Cheez Whiz plopped around on the cooked macaroni. I reach up for the Corn Flakes to place on top and
, I had none.
So I put Frosted Flakes on it. Dear God, I hope it doesn't turn out weird.

Sounds a little weird to me WOB! I will be picking up some Chinese food as I think we deserve a little treat. Nothing extravagant- just some beef with broccoli and steamed rice.
Even though my husband's surgery cost his PT annual salary so nice to see him in less pain-which will get better every day. Besides I think he would have had to stop working if we didn't go private for his hip-and he would really like to go back to work in the fall. The casserole turned out very delicious! ( Whew! ) Now I'm going to make a small batch of a white sauce, melt
more cheddar into it and mix it all through the cooked casserole because I want it to be MORE creamy/saucy.
There's always a fix. So relieved that those sweet flakes never affected the taste one way or another.

It's crazy how quickly I prepped/cooked up 2 massive long slabs of pork ribs. They were fall off the bone once finished.
I bought these in the a.m. yesterday at NF. 1 of them was marked incorrectly! ( price per pound was half of the others )
So the whole slab was $12.00. I added a 2nd slab at the other price.
Didn't even start the prep them till 2:30 p.m. Sliced both slabs into individual ribs. Pan seared all of them in 2 cast iron pans.
Pressure cooked 35 minutes, with some red wine, Raspberry vinaigrette, soy sauce and 2 Tbsp. D'jon mustard in the bottom of the pot.
Lifted them out and into a large bowl to dust with dry herbs. ( basil, Cool Runnings and everything bagel ).
Placed onto a metal grate inside a large roast pan. Put in a 300 degree oven ( uncovered ) to crust up and soften even more.
At 4 p.m. I took 3 out for my lunch, turned off the oven off but placed the roast pan back inside. The guys are taking these plus Air Fried
wedges and 1 ear of corn each in for their work dinner.

Last night was Lean ground beef cooked up with onions in a bowl topped with mustard/pickle/lettuce with a side of cubed sweet potatoes
Tonight- BLSL chicken with cubed sweet potatoes and green beans

Tonight was House special Shanghai noodles which hubs and I ate in our hotel bed-great meal for $18 and we didn't even finish it.

Today we are taking our friends out as a thank you for hosting us. Indian food is on the menu. Yesterday we toured around their huge garden, orchard and greenhouse munching on tomatoes, plums etc as we walked. I hope to fill a bag up with fruits and veggies before we head home tomorrow.

Sunday was " visit my sis and BIL " day! It's been too long from our last in person gathering and
we had overdue hugs to share! After 2 hours we were so ready to order food for delivery OR find
an eatery close enough that we could walk to.
Gloria in the Great Hall was a 6 minute walk away! My sis and BIL kept meaning to try it, but
they offer no takeout or delivery. We found out why. It would impact the quality and reputation
of their signature menu items.
Tbh, the prices were on the higher side BUT every single item was a culinary and artistic offering,
so no complaints from us. Just watching the servers bring amazing looking items items to other
tables piqued our interest! Three of us took a chance on something called Braised Short ribs.
Slow cooked meat served atop creamy mashed potatoes surrounded by ample dark juices. Crispy
fried onions and leafy garnish balanced on the very top did everything for presentation.
Imagine enjoying the best comfort dish ever, none of us were talking...just devouring the meal.
We caved ordering the Creme Brulé and Americano coffee after.
Afterwards we had more visitation back at their place on the huge balcony. My sides were sore from
laughing. My older sis and I don't even have to say anything, we crack each other up when our eyes
lock, leaving our hubbies shaking their heads!

Some of the fresh produce we brought home from BC, fresh homemade bread. I have refined the menu to include meatloaf and baked acorn squash and some mac and cheese.

Oh dear, we're doomed! DH discovered a bakery with amazing yummies, and it's a stone's throw away.
The one thing keeping us in check with carbs was the Cobbs locations were a longer drive away.
Monday we roasted up the last one of the Butterball football shaped turkey thingy's and had it with mashed
potatoes, boxed stuffing ( with sauteed onions, celery and dried cranberries mixed in ) and boiled carrots.
Canned turkey gravy too....ha ha
We're still considering it a home cooked meal.
