Last night I made baked chicken thighs, potatoes with onions; sauteed onions, carrots, mushrooms, and broccoli.
Last night I made two dinners (yep, I sound like a pig when I say it like that). It's gonna be a busy week so I fired up the slow cooker in the afternoon, and also made another dinner when we were ready to eat.
I made chicken in the slow cooker with tomatoes/corn/black beans/onion/south west spices. I clean out the bones after they're cooked, and then serve over rice. Total cost was about $10 for 5 hearty servings. ($6 for 10 chicken drumsticks at No Frills, $1 for canned tomatoes, $0.75 for can of corn, $1 for can of beans, the rest was onion and spices, and rice, so let's say $1.50).
I also made a sausage pasta sauce with loads of mushroom, green pepper and onions in it. ($2 for four sausages at No Frills, $1.50 for mushrooms, $1.50 for spaghetti, $2 for sauce, $1 for green peppers) let's round up to $10 here as well for at least 5 servings.
So for roughly $20 I got 10 servings for lunches and easy dinners... can't beat $2 per serving! Annnnd I don't have to cook for a few days :)
Tonight will be pork chops, taties, cabbage and apple crisp-about $1.50 per serving as I got the pork chops short dated and marked down for 50% off and threw them in the freezer. There is a blizzard blowing, so a nice smelling oven meal sounds good.

it was delish.
Homemade pizza tonight...have all the fixins at home.
Pork chop with a honey garlic sauce (in the crockpot)
steamed corn
baked potatoes (also in the crockpot)
hopefully homemade cheesecake for dessert.
Basically ate from the fridge/freezer on the weekend. Saturday night we made homemade burgers with homemade fries. Pizza for lunch on Sunday (freebies from RCSS last week) Sunday night we were home late from hockey so leftovers it was (burgers) and youngest had tacos since I cooked up the meat for the freezer :)

LOL frugal night.. eating leftovers which include sun chips, cucumbers, celery, chocolate & I made (again) a spinach with egg white omelette!
saturday a friend of ours came over with a whack of chicken. he had it soaking in milk (i'm all like, really?)...brought it to room temp and then breaded the pieces up and fried them. OMG. YUM. i made a broccoli salad (added green onion, shredded cheese, bacon and tossed in ceasar dressing) and spinach/ricotta manicotti (that i talked (suckered) our friend into stuffing...i hate getting my fingers all messy in that mix)
sunday was leftovers from the last few days (not the typical sunday dinner, but we didn't waste anything, so all's good).
tonight was rotini and meat/veggie/tomato sauce with a bit of shredded mozz cheese.
Tonight I went to the ladies Christmas dinner at church. It was potluck and there was sooo much food.
Last night was Veggie Fried Rice. I have been craving homemade Chinese Food and originally has it on my meal plan this week but did not realize my mom was working this week so I had to revamp my meal plan and the closest I could come to homemade Chinese was Fried Rice. It was good but not homemade Chinese, hopefully soon I will get my homemade Chinese, there is just no way I would be able to make it by the time I get off work and not eat dinner at like 8 or 9 pm. Darn this working for a living thing lol it gets in the way of yummy dinners some nights.
my turn for making pizza's tonight..I'm suppose to be installing a woodstove today so there will be a bunch around but its pouring rain now so I don't know if it will go ahead...I'm planning on making Hawaiian, meat lovers, a plain pepperoni and my signature parmesan chicken pizza.
Tonight I'm using up leftovers and adding to make it a big feast.
Potato puffs, pancakes (leftover from Sunday) sausage, toast and eggs.
