I keep a few bags of frozen bought from the store perogies for days like this - and tried something new instead of boiling them. Found idea online for casserole and just adapted it to what I had.
Bottom of 9x13 greased dish, put in 1.5 kg potato and cheese perogies - frozen.
I had leftover burger patties, so chopped them up, scattered over - along with about a cup of frozen sweetlet peas.
In a bowl, mixed up a can of cream of mushroom soup with 1/2 can milk, added salt and pepper, garlic and onion powder. Poured over stuff in casserole dish.
Bake covered at 350 for 35 minutes said the recipe.
I checked at 20 minutes, some of the perogies were stuck together so I separated them, and mixed them in the sauce. Added a few splashes of milk and about 3 tablespoons of margarine dotted on top.
Put back in the oven for another 20 minutes - and you know, it's pretty tasty and the perogies cook just right.
The main recipe had added shredded cheese on top, but I didn't do that - also some of the variations had adding 1 cup sour cream to the soup mixture. Some also added sauteed bacon and/or onions on top.
Note - I had to keep this warm for my husband, I went twice to add some more milk to reconstitute the sauce.
So just a warning, any sauce you make when it's first done gets totally sucked up into the perogies!

Nobody needs to take a meal into work today!!! ( Company Xmas meal served for all shifts! ) Hooray for the cook, I get a day off.
Last night I made sweet and sour meet balls with rice, boiled veggies, and a glass of milk. We're now out of my home made frozen meatballs. The last batch was made in Sept. I might make more over Christmas break. We might just have a variety of leftovers for supper tonight.

Breakfast for supper today - bacon and French toast, made from sliced buns.
I had a pancake breakfast (that I helped make) with one work group, and Swiss Chalet chicken for another group. No supper, just had a banana since I was feeling hungry.

Monday night we had our end of year Cribbage supper. Of course it was Assiette de Noel (Christmas Dish) which consisted of turkey with turkey gravy (brown meat mixed in with stuffing topped with a generous helping of white meat), a big slice of tortiere, steamed carrots, turnips and celery (fresh not canned or frozen); mashed potatoes with a brown gravy, Cranberry sauce, house salad and crusty rolls. Dessert was a choice of Black Forest cake, Strawberry vanilla cake, carrot cake, pudding au choumier, rice pudding with maple syrup. Coffee or tea. Also we had white and red wine.
All this was free,paid for by the Cribbage club.
I'm having baked chicken sandwiches, covered in bbq sauce.
