Homemade mac and cheese, broccoli and sunrise muffins for those who want dessert.
Thanks to Angela's post a while back, got some double smoked smokies from Co-op (SO GOOD!), baked them in the oven for a bit. Had with sauteed onions and cabbage - had added garlic, vinegar and lemon juice - and mixed in diced hashbrowns that I had just previously fried up, as well as leftover shell pasta - so is that a hash, then?
Whatever it was called, sure was delish eaten together!
I had some leftover homemade chicken soup and DH had whopper Wednesday. I had a new client today and it was a doozie of a job and then I had an online seminar literally 10 min after I got home so that meant a quick bite and a super fast shower to freshen up ;)
Last night I fried up some leftover roasted potatoes and made a Salad with Romaine, Cucumber, Cherry Tomatoes and since I need some protein in my meal I added some Bacon Bits and Cheddar Cheese and topped with Ranch Dressing. Not your average dinner but worked for a night alone.
Tonight I think I will make myself some pasta, I have a serious craving going so thinking a meat sauce with whatever Pasta Sauce I can get to in the stockpile room (being used as temp storage as we re organize our basement and shelves are completely blocked) and whatever I find in the fridge for veggies over whatever pasta I can get too (again stuck on the shelves in the stockpile room). Good news is ground beef if in stand up freezer as the chest freezer is somewhere under a pile in the stockpile room. Oh how I want my house back.
I had KD, weiners with Cheeze Whiz and frozen peas mixed in to make it "gourmet" (bawhahaha) . It was exactly what I was craving for the last few days and got the weiners for 99c and the KD foor 54c so was a cheap dinner with leftovers for lunch today! We call these affectionately "welfare meals" because we had it a lot growing up, but sometimes you just got to revisit a classic. :thumbs_up:
Tonight may be tacos or a nice juicy looking Angus sirloin steak with the yummy sides. My fridge is actually stocked for a change after doing a lot of travelling over the summer - its nice to have options!
made samosa last nite - was gonna try making my own dough but got lazy so i used butter puff pastry instead. I used it before and it turned out great - quick and easy. Still has a lot of samosa stuffing leftover. Maybe turn it into a curry soup. Hmmm
Roast pork (bones in, We think it taste a whole lot better), mashed potatoes and green beans from our garden.
I'm thinking of treating my youngest to DQ chicken strip basket. His brother is off with friends and they will be eating out so we should too!
...yesterday I stuffed 2 pork tenderloins, got them on sale for $3.00-$4.00 ea (cut through the center, open like a book and pound the meat flat) I used bread crumbs, a mixture of sauteed mushrooms, garlic, onion & spices, spinach and feta cheese..tied with kitchen twine seared in a fry pan and baked in the oven for about an hour...I made a sauce that was okay..onions, mushrooms & apple chopped really small, cream of mushroom soup, thyme,, etc...needless to say there was lots of leftovers for today...with it I had mashed potatoes that went good with the sauce :)
I had some steak with onions and green/red peppers and some rice.

Mr. Noodles chicken flavour, sandwiches with summer sausage and cheese for husband, just soda crackers for me.
