made a big pot of mostly veggie soup, then added in these things called Nu Pasta ( gluten free, very low calorie, no salt fat, sodium or sugar! )

..I made fettuccine alfredo with pan seared scallops..seared the scallops in a hot pan with S&P and garlic..while the water was boiling for the fettuccine, I made a sauce with mushrooms, onion, garlic, Classico Alfredo with sun-dried tomatoes, garlic & herb cream cheese, pasta water, etc ..added the scallops to simmer, then added the fettuccine to the pan to let it cook a little more, then lots of parmesan cheese...and lots of garlic bread to soak up the yummy sauce....lots of garlic..lol

We are making some donair pizzas tonight.
Hectic and stressful day yesterday so I had DH pick up a ravioli from a local restaurant that we love. It's not on my normal menu for my healthy eating plan but I do allow myself a "cheat day" and yesterday was it. Too tired and stressed to even think.
Tonight I will be attempting to make dinner with DH and I'm not sure what exactly but I know either kale or spinach will be in it and most likely goat cheese too ;) :P
..I have b/s chicken breast thawing, think I might pound them out and stuff with something (TBD) and cook with a cream of mushroom sauce and have with it mashed potatoes, carrots and sauteed kale..

don't want to cook or eat....I am kind of tired. Maybe I'll just make a bowl of popcorn and sit and watch the Flyers pummel the Leafs??
Looking like tonight will be Chinese, I spent almost all day baking for work and now I have no ambition. I tucked away some money I made selling crochet items before Christmas so think I will use this money.
