Using up the last of the leftovers.... Rice with leftover chicken curry and char siu
Nothing fancy, some spaghetti and frozen chicken strips (The life of a university student)
Ribs and baked potatoes for the meat eaters, black bean soup for the teen.
Pork chops with mushrooms and onions, mashed potatoes and carrots. Apple blossom and vanilla ice cream for dessert.
..I was late putting a cross rib beef roast in the slow cooker, so that will probably be something for tomorrow and I have chicken thighs (skin removed) marinating in the fridge that I'm hoping to bbq this evening before the rain starts..and I'm having corn on the cob and a salad :) and I p/u some fresh rolls today :)
Today is my first attempt at making baked beans from scratch in the oven. My dad used to make them when I was in high school, but he lost the recipe. I found this recipe, but I chopped up 3 onions and 5 pork steaks to go with it. We will have it with leftover potatoes from last night's supper. I'll freeze some of the leftovers. Edit: It has been in the oven for 5.5hrs (started at 10am) and the beans are still too firm. I've added more water and turned it up to 325. I'm wanting to feed my family at 4:30 today, but the beans might not be done. I'm also finding it sweet. The chunks of pork are tender but dry when you eat them. I can steal some of them to feed the family if the beans aren't done in time.
We're going to have fish chowder.
DW wants harveys so that's what it will be.
I think DH is making chili.
Last night I did up 4 slabs of pork ribs. I find the toughest part is cutting the large long slabs before cooking them. ( making them all 1 single bone and meat surrounding it ), thank goodness the pressure cooker did most of the work to tenderize them, finished them off in the oven with a thin smear of BBQ sauce as a coating. Plain steamed rice on the side and broccoli.
Needed something simple tonight, been travelling all week and so far behind so Nachos it is.
Tonite was shake and bake chicken breast , French fries , dressing and gravy ,coleslaw and Diet Pepsi
..I ended up singing & bbqing in the rain..it was so nice..warm, no wind and just a constant soft sprinkle of rain so I went ahead and bbq'd...the chicken was sooo good, worth the effort! there's leftovers and I made lots...and the beef roast (which I sampled last night and is yummy) is in the fridge so lots to choose from. I kept the pan juices to make gravy ..so will probably make mashed potatoes and veggies of some sort
