Preparing to make a batch of Chana Aloo, ( Chickpea potato curry ). It's been some time since we've slurped this delicious meal up.
16 ounces of dried chickpeas are soaking as I'm making a triple recipe. Giving my sis and BIL a container of it to take home after our
Restaurant outing on Saturday. They don't know I'm making it so that's the best part!
Bratwurst with potato salad-might as well enjoy a few more summery meals.
Hubs is making homemade chicken fingers and I am boiling small potatoes and steaming garden yellow and green beans.
For their work dinner the guys are taking in 2 Shake 'n Baked chx thighs each, sides are fresh steamed green beans + a fresh boiled beet each.
Just waiting on the large Shepherd's Pie I made to finish up in the oven, this one is packed full of veggies. That'll be for their work meal tomorrow
( and some for my " brunch " today. ) The chopping and cooking left me uninterested to eating breakkie.
Ended up being away all day yesterday-
Lunch was beef burger patty wrapped in lettuce with Ceaser salad
Dinner Steak with a soggy green salad... meh and a few parm fries just because they were on my plate and everyone at the table only had 1 and wouldn't take them from me!
Tonight- Roasted Red pepper soup (which I am making this afternoon) with a protein - probably chicken and a Greek Salad.
Geesh! Now what?? Did I mention it was a large casserole size of S. Pie I had made yesterday morning? Once DS portioned out their
work meals for today in their glass dishes, 1/3 of it remained. Guess I was lucky to grab my brunch single serve portion yesterday...ha ha
I usually don't ask them to take the same meal in 2 days in a row, so it'll be back to the drawing board to think up a Thursday work meal.
Still determined to take a protein from the freezer first and pair it with whatever I can from the stockpile of the pantry and produce from
the crisper. Creativity will be required!
Corn beef fritters, mashed potatoes and cabbage-my mum used to make this. So I will make it for old time sake.
Ever since my doctor got on my case on Sept 4th about my having high cholesterol and high blood sugar, it's been a lot of Favorite Quinoa Salad Recipe - Cookie and Kate daily with a can of sliced olives, a contained a fresh grape tomatoes, and 3x the bell peppers mixed in. Last night were two lightly seasoned (no salt) chicken breasts with the salad. Lost 9.7lb eating this way and already feel healthier.
Last night's dinner was so good! I will probably have a repeat tonight.

Tonight I am making a homemade pasta sauce with frozen tomatoes and adding cottage cheese to the sauce.
Will add turkey meatballs for guys over pasta.
I will have some over steamed cabbage with ground beef/onions/peppers.
Ham, baked potatoes and fresh green beans.
No cooking for me today! The guys are getting fed at the Company celebrating their 60 years in Operation
Not sure if this is a brag or a sad thing, but DH is now in his 54th year of employment with them. He refuses to retire....ugh!
I have a hankering for French onion soup so I will pick up a couple of ingredients and give it a try.
