Left over breaded chicken and Cesar salad and bottle Diet Pepsi
Sat night we made a nice roast beef dinner- Mashed potatoes, gravy, green beans.
Sun- Leftover roast dinner/chicken fingers/rice.
Tonight- Busy night so the man will have dinner ready for me after dropping kids everywhere and my meeting. Not sure what he is making but it is always good so no complaints!
Tuesday- Will take something out/plan tonight. Ceaser salad for sure since we have 5 romaine hearts that need to be eaten this week.
I just made a huge pot of chili
We have some leftover chicken so a chicken Caesar salad seems to be in order
Fried potatoes and onions, leftover roast ham, Mann's fresh peas, fresh and steamed cauliflower.
Toast and couple fried eggs and Diet Pepsi
to busy cook tonite ..easy and quick and still fills belly
we've been busy so i picked up some KFC using their two can dine coupon and got 2 big crunch combos; they sure did not taste as good as i remembered. We will get the bucket instead from now on.
Well I did not take anything out last night for tonight. But I have a few back up plans that I will use tonight. I will make sure to prep dinner for tomorrow night tonight :) It is a beautiful day today so I will make sure to get out and walk (treadmill is good when weather is crappy- no excuses but I like to walk outside when I can and tonight I can!)
Last night we had Pork Roast, Mashed Potatoes, Potato Stuffing and Candied Acorn Squash
I made 'cheater' french onion soup on Sunday. Tastes even better today.
12 larger yellow (or white) onions, caramelized
3 containers beef broth
3 bay leaves
5ish cloves garlic, whole
Tsp-ish of Mrs Dash garlic and herbs
2 packets Au Jus
Basically just caramelize the heck out of the onions, stir in the au jus powder with the onions and then dump in the broth and add everything else. Let it simmer a couple hours and then put it away for the next day. Fills about 3 3-lb margarine containers. I top it with the Nonni's croutons from costco and mozzarella because that's what I usually have on hand. If using regular bread, add a little parmesan to the soup before adding your melting cheese.
..made a stir fry, it was okay...pork strips, onion, garlic, S & P, ginger, carrot, shredded cabbage, corn (cleaning out the fridge) chicken stock, cornstarch, sugar, soya sauce (it was still missing something lol) and rice!
