Think I am going to try Marinated Veggies (Zucchini, Mushrooms, Peppers & Onion) with Chicken and Rice for Dinner
..woke up this morning with a mild cold (so far), up EARLY so got out of the freezer a turkey carcass and all the leftover turkey and made soup & doughboys for lunch, will be having the same thing for dinner..
The weather north was not being nice so we came home early. We had picked up some ground beef yesterday so my wife will make a meatloaf with mashed potatoes and corn on the cob
..have ground beef thawing so might make burgers (maybe even bbq) and roasted red potatoes...or maybe lazy cabbage roll hash but not sure if the cabbage is still good so most likely burgers...

Last night we tried Steak Sandwiches with Oven Fries and a Cesar Salad. Good news is, it did not upset the side and was something different so I am happy but a dish we still need to limit.
Tonight chicken breasts baked in the oven with green beans. Will make another side for the boys. Probably oven fries.
..the cabbage was okay so I'm making cabbage roll hash and a pan of cream cheese, chocolate chunk brownies :-)

Leftovers would be in order, but I may get inspired :shrug:
I bought a pack of BLSL chicken breasts and put them in the fridge while normally I would freeze most of them. The first night I made chicken Caesar salad, last night was BBQ chicken with a spicy rub and cauliflower with cheese sauce, tonight is chicken veggie stir fry with rice and tomorrow will be chicken quesadillas. By Saturday we will definitely be ready for a change from chicken-but at least I had all the ingredients for these 4 meals on hand and didn't have to figure out what meat to thaw out each night or run to the store! I am into whatever is easy-so either cooking extra each night to have leftovers or my chicken themed week this week.
