Baked Tortellini with Roasted Portabello Tomato Sauce and to up the veggies, I added sliced mushrooms. If it was just for me I would have also added carrots and peppers but Mom does not like. On the side I am making Cheesy Garlic Naan and a Cesar Salad
Alot of eggs to use up = egg salad sandwiches
I had leftover meatloaf with leftover yellow beans sprinkled with parm and then I made some Mashed Potatoes to go with it.
my mom gave us a container of spring rolls filling so i just had to buy spring roll wrappers and we had them for dinner tonight

Today was forgotten dinner.
Last night forgot to take an item out of the freezer. Ok. Will change menu. Then forgot to take something else out. Well then.
So corn tortillas it is with jalapeņo cabbage slaw, chicken and salsa mixture for filling.

Heading north in a bit for the thanksgiving long weekend. Everyone has alot of fun helping out with the shut down fall chores like lawn raking then have our thanksgiving feast. Last but not least is everyone gets in on the pumpking carving.
Tonight is homemade spagetti and fresh bread we will pick up on our way up there. We will probably stop in Barrie at a place called they Sweet Oven for their butter tarts. The tarts never seem to last long when we do

Yesterday we had Roast Beef with yellow and green string beans, carrots and potatoes with sauteed bread crumbs, gravy and salad.
Today will be meatless so im doing a plate of cut up fruits and raw vegies and dip (really easy: ketchup and mayonnaise mixed)
A beautiful day/weekend on tap, I have a busy weekend ahead so not able to cook my turkey until Monday (or maybe Tuesday :-)) I'm making the full turkey dinner, including making my own pumpkin pie. This evening going to bbq some of those thin beef ribs not sure on the sides. Happy Thanksgiving to everyone!!
