You know, i made that roast chicken a few days ago. So we had roast chicken for that supper, then we had hot chicken sandwiches, then i made a chicken pot pie. tonight hubby had hot chicken sandwich again for dinner. And we still have enough chicken left to make chicken salad for tomorrows lumch. And this is all from one chicken! Cluck Cluck!
I had a BLT.

We made homemade pizza but we were still very full from a late lunch so we each just ate a couple small slices. So leftovers in the fridge for tomorrow.

Yesterday for dinner was DH's homemade crab cakes ( I mixed up a spicy dip to go with ) , real mashed spuds, cornbread made in a cast iron pan, brussel sprouts and sliced baby cucumbers. We popped open a bottle of wine because....well after all
it WAS Thursday!
Today I was supposed to make the Jamie Oliver Crazy Fish pie thing, but decided on burgers, homemade potato/egg salad, and chunks of watermelon/honeydew instead.
There are enough leftovers to get us through Saturday, so the fish pie will be on Sunday night.

ha ha !!! ty @Purdee I loved Uncle Roger's video. He is absolutely right! How did Jamie get this so wrong??
Jam in fried rice? Nope. I make fried rice all the time, I use a wok, drizzle sesame oil in it, NEVER fry green onions in the bottom first. So sad.
Uncle Roger's best line? " you hear sizzling, I hear my ancestors crying! " bwahaha

Was feeling some sort of Sandwich for dinner tonight, originally I was going to make Steak Sandwiches but decided I was not feeling Beef tonight so we are going to have:

Being the eternal optimist, I am pretending it is summer-so I whipped up a potato salad which I will serve with pork tenderloin and asparagus. Yesterday it was 20 and today is 0 and at least 2 inches of snow and still coming down. That is the price we pay for living close to the mountains. We are still to have our first spring rains-mind you moisture in any form is definitely needed-especially for the farmers-and all of us who want to eat their crops. Lucky I took a bike ride and sat out on the deck yesterday in the sunshine!

Originally I was thinking of having Roast Beef for dinner but again the more I thought about it the more I was like is that what I really want, turns out the answer was no. So now we are having:

I made a large steamed egg (egg, ground pork, crab meat, vermicelli noodles, woods ears mushroom, seasonings). Serve with steamed rice and pickled veggies on the side.

Friday; It was cranberry chicken with mashed patatoes and yellows beans
Saturday: Dijonnaise Chicken with breakest patatoes patties
Sunday; Hamburgers with all the fixingsThe goal is to live day by day not to much thinking hahaha !!!!

It's going to be back to basics for us this week. I have way too many dried beans in stock, so a batch of chili it is! Might even make up another cast iron corn bread to go with it. Only put the beans to soak late last night, so will make the chili early tomorrow.
That means leftovers for today!
