Another Hydro power outage Friday night here! ( Grrr! I missed the entire Leaf's game ) .
The loud bang I heard at 6:35 p.m. from the street jolted and concerned me.
Then all was dark.
I had to reset Jeopardy to record at 10:30 when they eventually made the repairs and the power was restored. In the meantime....yawn. The waiting is monotonous.
Then DS decided to make up a charcuterie board for 2.
He worked by flashlight in the kitchen. I kept asking if he needed help, but he said no.
Out came the display...sliced keilbasa, lean turkey slices rolled up tight and sliced in half, 3 cheeses in cubes/slices/pieces ( Balderson extra old, Gouda and orange old cheddar ) , Triscuit crackers spread with herb cream cheese, bread and butter pickles, and cantaloupe and honey dew melon balls.
Kind of fun noshing away the sadness of another screw up by the Hydro crew that has been working non stop here for a month.

Dad will have his st-hubert ribs and I will have my dijonnaise chicken strips (so good!).We will both have patatoes wedges or patatoes patties with that..
Dessert plenty of options are there!

Yesterday I made chicken parmesan and had it on toasted ciabatta buns with butter & garlic, it was really good..AND...there's leftovers for today!

Took one of my Meal Ideas for next week and will make it tonight instead:
Chicken Souvlaki Bowls with Stir Fry Veggies, Rice & Garlic Garlic Sauce. I also sauteed up some Zucchini, Peppers and Mushrooms to be used during the week that can be added to bowl to add some extra veggies. I am all about adding the extra Veggies these days2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

We had lots of errands to do today-so this a.m. I threw a small beef roast and veggies in the slow cooker-smelled and tasted delicious when we got home. DH got his Covid shot today so hopefully in a few months we will each have shot 2. He was in and out in no time-so far so good with him feeling just fine.

my girls and I had sandwiches made with oven roasted turkey from the deli, they had juice boxes and i had a pepsi and some jalapeno chips

Today I made cranberry oatmeal muffins and beef/barley/veggie soup with the pot roast leftovers so they will appear on the menu.

Combined a family sized tray of extra lean gr. beef with a marked down half sized tray of gr. pork, added seasonings, breadcrumbs, eggs, fine diced green onions and mushrooms. Formed 12 mini sized slider patties and 12 " DH sized "
burgers.
Despite being gorgeous outside I don't feel like readying the coals for BBQ, so I'll just pan fry these up later.
One side..... some of a store bought cold pasta salad.
Yikes! Blue Jays are down 4-0 to the Yankees.... lots of time left though.

Right now i have the crock pot going. I cut up 3 small pork chops, added some onions, mushrooms, celery, and Diana Chicken & Rib sauce. After 3 hours i will add some red pepper, broccoli, and asparagus and cook it for another hour. Will be serving this over steamed rice.
