Not feeling my best today, was it my exposure to Covid (we will find out tomorrow when I test again), was it getting my booster, don't know but keeping it simple with:

Dump and Cook Instant Pot Alfredo and will add Chicken, Mushrooms and Broccoli

Tonight we were having quite the thunderstorm with hail during supper time. We had hotdogs in buns, cucumber salad, radishes from our garden, baby cut carrots, and sliced apple. Mini cherry pies and Icecream for dessert.

Hope everyone is having a wonderful summer so far! Its supposed to be a beauty evening, so it will be a deck evening with a few cocktails. Still deciding on the menu, bacon wrapped scallops but still deciding what else...

We Christened the first half of the finished backyard patio stone area with BBQ. DH did the baked spuds first, then when the coals where white enough I got in there to cook the steaks. We had his garden picked green beans, and slathered caramelized onions and sauteed mushrooms over our steaks.

Earlier I had made a nacho layered dip, but none of us had any room, so tomorrow we'll dig into that.....or maybe later tonight?

Tonight DH BBQ'd a half chicken with his special spice rub and BBQ sauce -yum. More than enough for both of us. We just grabbed whatever sides we wanted with it-coleslaw I made yesterday, tossed salad, fruit, yogurt etc. Very lazy dinner at our house.

Breakfast for dinner. Tofu scramble, McCain hash browns, black bean patty, tomato and cucumber salad with a dilly garlic dip and green onions form my garden.

Various random things tonight: a handful of salted crackers, white sandwich bread with raspberry jam, iced tea and a package of seaweed snacks.

Tomorrow, I intend to cook the contents of a bag of frozen spinach and feta perogies in the early morning for later eating. Then it's pantry surprise time for a salad or side dish.

I am admiring all of you who create meals for dinner on a regular basis! I have to skip one-pan meals in the oven during the heat right now. Our BBQ has not been used in the past two months so the toaster oven has been handy for the odd entree or pan of burgers.
