Not sure if it is the hot weather or what but I am so tired this week so tonight I pulled BBQ Pulled Chicken from the Freezer to make Sandwiches.
Still need a side might keep it simple with a Side Salad and maybe a few chips

DH's been on a week's R & R, so no real pressure for me to cook, he likes to BBQ when he's off so I've allowed it ( bwahaha) .
My dinner tonight is pretty much a carbon copy of most of my dinners. 2 cups roasted red pepper/cauliflower pureed soup, large garden salad, hummus with cucumber sticks and a small bit of tuna with mayo spread over slabs of zucchini.
Later on I have a last night time snack, which always includes some PEANUT BUTTER! Mmmmm
hoping to bbq later, steak & asparagus so far, see what else later
We went to the local farmers market last night and ended up at one of fave vegan food trucks for a splurge.

Tonight was Mozzarella Chicken over Pasta, oh my gosh so good, I could eat this for days.
Normally I would have a salad with it but I had a huge BBQ Chicken Caesar Salad for lunch so skipped the Salad with dinner.
Cheese cake, not sure where I got the idea. People shouldn't put such ideas in my little head.

Thursday’s dinner was individual naan pizzas with cauli crumble veggie round, shredded kale and gusta mozzarella. I added Cajun spice blend to the crumble for an extra kick.

Yesterday was a couscous salad with all sorts of clean the fridge out fixings. Tomatoes, cucumbers, green onions, dried cranberries, salad topper from Costco, apples and tofurkey “chickun” pieces with Trader Joes garlicky citrus blend and Kraft vinaigrette. Sooooo good.

Tonight I am trying Instant Pot dump Alfredo, it is a meatless dish so I am going to cook up some Chicken, Mushrooms and whatever veggies I find on the side to add in.
its going to be a lazy deck day, reading in the shade and something on the bbq later

Tonight's dinner ( for me only ) will be the trifecta of soup, salad and meatloaf. Also a small bit of hummus with cucumbers sticks and 5 calorie Jello cups topped with light whipped cream for dessert! ,
The guys will dine on high calorie, heavy carb, and high fat things....I won't be a witness to it. ha ha

Used more leftovers and made a bbq/tex mex couscous with baby potatoes, tomatoes, green onions, black beans and charred corn.
Grocery shopping it was today so I bought tortillas,chicken skewers,tomatoes ,english cucumbers,iceberg lettucce and tzaziki..so I am thinking of a sort of wrap with that
