We ate lunch late and weren't really hungry at Dinner so when we got hungry I took a bag of Chicken Chunks, chopped a few mushrooms and made Chicken Chunks with Mushroom Gravy over leftover Mashed Potatoes.
Not bad for having no idea what was for dinner at 6 and having dinner on the table before 7.

People tried to feed me salad tonight.
It didn’t work.

Our family get-together has been postponed due to the weather, so we're staying home and having a sous-vide prime rib roast. Not the same as turkey dinner, but a pretty nice substitute. Oh, and merry Christmas / happy holidays depending on what you celebrate.

We had planned on a Roast Chicken since it is just the two of us this year but made a last minute change last night.
We are now having Prime Rib with Roasted Potatoes (They are boiled potatoes you put on a cookie sheet with butter and they are just amazing) and Roasted Garlic Parmesan Butternut Squash.

It is just my dad and me tonight.
We planned our traditionnal Christmas dinner.
Tourtiere with homemade fruits chow chow,meat balls ragout,mashed patatoes and various choices of desserts( black forest cake,rapsberries mousse,christmas cookies(butter and gingerbread,fruits cake and sucre a la creme.

Dh and I went in to the city to visit the newest bakery. We’ve been before but it’s sooooooo good we had to return. We grabbed a few treats and then headed to a new to us vegan pizza place that also has Indian food. Omg! We had the butter “chicken” and it was sooooooo freaking good and so filling that it became our lunch and dinner!
Maybe we will have a treat later tonight after our workout.

We had Christmas with Dad's family last night as Christmas Eve was postponed due to the weather.
We had: Sauerbraten, Potatoes, Dumplings, Red Cabbage, Peas, Carrots & Bean Salad.
Desserts were: Peanut Butter Cup Cheesecake, Almond Sprinkle Cookies, Ooey Gooey Chocolate Crinkle Cookies and a variety of Vegan Desserts.

Last night DH and I got both turkey carcasses going into the large pot for soup. Lots to work with. Rice was the final choice for what carb to add and it is delicious.
We have many options of leftovers ( not just the turkey and fixings from the last 2 dinners ) but appetizers as well. ( homemade won ton soup, sausage rolls, pizza, meatloaf mini sliders, crock pot meatballs with cherry sauce.....Mmmmm ) I won't need to cook for a few days!
On the 25th my sister surprised us all by bringing her cheese/Bisquick meatballs ( served with plum sauce ) and her Christmas pudding ( she made her own rum sauce too ).
I could not stop at one serving of that damn pudding!

Had a bunch of Cherry Tomatoes we needed to use up so tonight is Mozzarella Chicken over Pasta.
It is a bed of Onions, Cherry Tomatoes, and Garlic, topped with Chicken and baked for 25 minutes. After 25 minutes you pull it out and top it with Mozzarella and just because I will also add some Parmesan.
And, because I have lettuce again, a nice Cesar Salad on the side.

Dad is at her sister house for dinner .I dont know what they will have but I am sure that will be good :)
Me I just dont feel really well so I declined. Had appetizers cooked the 5 packages to be ready and because of the lack of space in both freezers
So I had: Mozzarella sticks,mini quiche lorraine and florentine,arrancini balls,chicken in pastry rolls and If I am hungry later we still have leftover ragout meatballs and tourtiere.

Raspberry cheesecake and apple strudel.
There was other stuff before that I wasn’t much interested in.

Tonight I will be making Pork Tenderloin with Roasted Potatoes & Carrots, it will all be cooked in one pan with the carrots and potatoes on the bottom and Pork Tenderloin on top.
Also toying with cutting up a sweet potato and adding it as well, I need to use up some of my sweet potatoes, we are a little overstocked.

so turns out I LIKE parsnips! Never ate one in my life before Christmas dinner this year. They're not the cheapest veg to buy but I'll probably include them now for Christmas at least.
