I got my butt in gear early this morning and have all the stuff prepared for a later afternoon BBQ. Spuds are washed, pricked and foil wrapped,
cauliflower is sliced into slabs ( steak, lol ) and sitting on an EVOO sprayed baking sheet that was resprinkled with some awesome dried herbs and S & P.
Red bell peppers are halved, scooped out and flattened for the grill. The last thing I will cook on the BBQ are the steaks. They never take as long as one would think.
Yesterday's was Dad's Bday so Step-Mom made dinner for him, did not know what we were having as she told us to bring ourselves.
We had Lasagna, Garlic Bread and Caesar Salad, yum!
Tonight I am making Slow Cooker Butter Chicken, the Chicken is in a Yogurt and Spice mixture in the fridge marinating, I will make the sauce and pop it in the slow cooker around lunch time as it only has to cook for 4 to 5 hours. On the side I will be making Broccoli which needs to be used up.
I am so excited, we love Butter Chicken but it is so hard to find one without coconut milk in it and we have a coconut allergy, hoping this is a good one. Bonus, I have recently become obsessed with Yogurt Marinated Chicken.
Last night was PB and J sandwiches since we were both full from lunch but tonight will be naan pizzas and a side salad.
Tonight we are having Homemade Chicken Tenders with Homemade Copycat Sweet Baby Ray's BBQ Sauce, Oven Fries and Caesar Salad.
Sliced and toasted up a1/3 of a baguette, added bacon, tomato, mayo and romaine and enjoyed it with a Coke Zero
Sausage flavoured bolognese sauce using tofu and bucatini pasta.
Not super hungry since Dh made our protein smoothie so later we will have a mini cucumber and mini tomato salad with aged balsamic, evoo , oregano and a bit of fresh garlic. Tofu is in the same sauce to marinate and I’ll fry it up last.
The guys are having chicken adobo over rice, broccoli as their side. Made it just past midnight to be ready for today.
Just whipped up a pot of chili for dinner.
Making Ravioli Lasagna but I will be honest wasn't feeling the Ricotta tonight so it is just sauce and cheese (mozzarella & parm) with Garlic Bread.
I'm not sure what I'll make for dinner Saturday, I might just let the guys graze and search the fridge for something to survive on.....lol.
I have 2 lovely pieces of Corned beef that I'll be boiling up for Sunday's dinner. I had planned on the corned beef and cabbage meal as
soon as I saw the cabbage on for 49 cents a lb. at Metro and the corned beef on sale at FB.
This was ALL before I was aware that this meal is an Irish tradition?? OR is it? Sucker! I had heard on a daytime show that it was a common
meal served on St Patrick's Day. However, only the Irish-Americans had this meal, not something served in Ireland on March 17th.
I had to scratch my head as this was a meal served in DH's home regularly! There's no Irish blood in that family ( that I know of ).
Even if there was, it'd be stomped out by the Ukrainian genes....ha ha
Hope ours turns out as appetizing as this one.

Happy St Patrick's Day all! ( well on Sunday )
Last night I made Chicken and Mushroom Skillet, it is Chicken, Mushrooms, Peas, in a cream sauce. A quick easy one-pot meal.
Good morning! All the ducks are in a row here. Both desserts I made yesterday ( a 7 ingredient Key Lime Pie, and an Orange Carrot Cake baked in individually sized Bundt pans ).There's crushed macadamia nuts in the graham crust, Mmm. The icing drizzled over them was tinted green! lol.
The cabbage is cut up into wedges for boiling, the corned beef will be pressure cooked ( should take about 1 hour ), the potatoes are washed and ready to bake ( smashed down, cooked twice with EVOO and butter ). Roasting a few thick slices of carrot as an extra side dish.
We've agreed upon 6:30 p.m. as our to sit down time. Hope the guys remember that detail?
