I don't want to cook tonight. Been making nice meals all week. I'm feeling like chinese tonight, have to see if my taste buds change before then....."Honey, I forgot to take something out of the freezer today, how about we go out for dinner" ;)
Tonight will be chicken and I am going to make a side of Quinao - will prob roast zuchini, garlic and eggplant in the oven and mix it with the quinao.

I made Corn Flake crusted chicken the other night and served it with Arctic Garden's wild rice mix (which was pretty gross, lol).
I did, however use my new marinade injector!
Last night, made sauteed ground pork with onions, cauliflower and broccoli in a mushroom sauce garlicked up, served over penne.
Ah, I'm thinking that's a great idea.... we order in, though, and have enough to eat for two suppers... will seriously consider this, lol! Hm... though I like to do it in the middle of the week, usually.
Otherwise, it's going to be highliner baked cod and potato salad.
left over seafood lasagna from lastnight.. maybe ill saute some veggies to go with it, soo delicious and worth the cost to make it

Already have a whole chicken soaking in BBQ sauce in the crockpot having something with it not sure yet!
Ended up just having eggs for supper last night.
I'm done speculating on what I'm going to make til hours just before the meal, lol!
I have a whole chicken roasting in the oven, going to do some mashd potatoes, roastex carrots and asparagus with some gravy. And yes, it was chinese food last night :)
Homemade baked beans and roasted veggies. I thought my girls would complain but they liked it!
I had two large ceasars and a whiskey sour on the patio LOL
Now I'm having ice cream, best dinner this week.
Did a bit of a batch cook today. Made four personal pizzas on Greek pitas with turkey pepperoni, red pepper and onion, three personal salads and four servings of garlic/ginger/sesame beef stirfry (two of which were dinner for me and my fiancé). I am going away tomorrow for a week, so don't want my fiancé going back to his bachelor ways of canned chef boyardee straight from the can, cold!
Glad you got the Chinese food, holly - I'll still be craving some for a while yet....
Made a yummy Caesar salad, and had Co-op rising crust pizzas - deluxe and hawaiian.
Mexican lasagna - build layers in a pan using:
Small tortillas from Old El Paso kit (bought for the FPC Coke coupons)
Stagg Chili beans, (bought with coupons)
Shredded Cheese bought on a kraft promo netting free product
Fresh Chives from garden
Free sour cream from RCSS wub Old El Paso kits (just ended)
Cover with discounted aluminum foil
Serve with discounted frozen juice
Well my batch cooking was too tempting it appears. Woke up this morning with only ONE of the original FOUR mini pizzas left - I told him he will starve while I am gone :cheesygrin:
Also, I really don't get the midnight snack eating thing...
Tonight I'm trying an 'island marinade' with chicken that is very different from my usual dinner fare! Serving it with bbq corn and roast potatoes. I'll edit this post to let everyone know if it was good!

Yesterday was my husband's 'name day' (Saint's day), and usually I would cook him a special meal. However, he decided to cook his amazing schnitzel, along with mashed potatoes. He doesn't ever bother with a veg, so my son and I had marinated cucumber and onion salad.
About the potatoes, I usually make 3/4 of a dutch oven (I have three approximately the same size). However, he chose the corn pot (significantly larger), and made a whole pot, so I'm figuring there are enough spuds left over for two meals yet!
I made faux homemade baked beans, I took 2 cans of six bean medley and mixed in a bunch of molasses, brown sugar, mustard, salt and pepper. Then I simmered it for 20 mins just for the flavour. I put them this morning for breakfast (because I work nights) with baked chicken thighs and lightly breaded fried onion strings.
Saturday attended a Bridal Shower and they served a turkey dinner for supper!
Sunday was pulled pork sandwiches with salad (made the pork in the crock pot)
Tonight will be something with the left over pork ,I left some plain with no sauce, so I might make a pork stir fry?
Tonight will be veal cuttlets in sauce baked, some pasta and meatballs, some veggies and a tomatoe salad with mozzarella :)
tonight we had spagehtti and garliic bread(was only cheat sauce with my added flair not homemade lol)

I didn't expect my homemade beans to get so many "likes" - thanks.
I usually soak the beans overnight and then let them slow cook in the crock pot with the molasses, brown sugar, ketchup etc.... The other day though I had a craving for them and so I took a short cut and boiled them for about 1 1/2 hrs to soften them and then I added the ingredients (without draining the water) and let it boil down and thicken - turned out good!
Tonight I think I'm going to make homemade macaroni and cheese with a nice big salad.
