Tonight was chicken thighs, glazed carrots and caesar salad. :)
Also bought 2 of the tombstone 2 pack pizzas at walmart, and price matched 2 of the delissio 2 pack pizzas. So I have 8 pizzas, think I'm gonna have plenty of pizza for a while coming up,lol.
My son and I had tuna on toast, with tomato soup. Husband had crackers and peanut butter. (?)
We are having BBQ chicken breasts, McCain Hashbrowns and corn on the cob...I spent 2 days eating hospital food this week and then once I was home have been eating hamburgers, hotdogs, sandwiches and potato salad since. Soooo looking forward to a home cooked meal!!!

Tonight it's just me and DH so we're having Janes lemon and herb crusted filet of sole. I plan to scrape the "crusted part" off mine. lol. Who needs the breading anyway? Toss with that a healthy dollop of vegetables (cooked for DH and raw for me) and we should be good. I might make a starchy thing so DH doesn't whine...lol...but to be honest, I'm having too much fun on SC so unless I get moving soon...like, REAL soon....supper is gonna be done and it'll just be meat and veggies. Oh well. Who needs starchy crap anyway?

So am I. Nobody loves a big fat bowl of pasta with grated cheddar on it more than me. mmmm. and perogies. nom nom nom. oh oh oh...and a big bag of salt and vinegar chips. Like, a really big bag of salt and vinegar.
when I was 14, I could eat that stuff ALL the time without any repercussions.
So it's better for me to accidentally on purpose "forget" to cook the carbs at supper. Otherwise, I'll have to ride my damned bike for another hour tomorrow to burn it off if I do. Gheesh. I never used to understand the phrase "from your lips to your hips," but as I begin to age, well, I've started to understand how it can happen.
It's moments like this when I miss being 14.

Although...someone pass me the Tums. Costco polish sausage dog and pop piled high with hot peppers invariably gives me indigestion. haha.
Home made sweet potato fries with dip. We also had make your own individual pizzas. Soft tacos for crust, pasta sauce, grated cheese, canned pinapple and mushrooms, sliced wieners, and salami meat.
Last night I made oven smoked ribs (it fun making a tiny smoker in your oven) with garlic and sea salt roasted mini potatoes and roasted garlic asparagus.
If your wondering about making a smoker for your oven, it's easy. Buy 3 of those big foil pans at the dollar store and stack two together for the bottom. Add several briquettes to the bottom. Light the and use the third pan for a lid. Turn the oven on as high as it will go and put the pan in there, meanwhile you had had soaking your hickory or mesquite chips in water for at least 3 or 4 hours (the longer the better). When the pan is super hot, remove it from the oven, (make sure whatever you are smoking is on a rack and ready to set in the pan so you can close it up quickly so you don't end up setting off the smoke alarm. Put you chips that you have drained most of the water out of, in the pan, add your chips, then place your rack of meat/and or veggies in it. Replace the lid. Put back in the oven, turn the heat down to about 350 and voila, mini smoker!
Tonights meal I think I will cook diablo garlicy chicken with mushroom risotto and maybe some balsamic glazed carrots.
Last night, I made baked chicken thighs - got them crispy first, then put on the Philly cooking creme (just to try it out, glad it was free, won't bother buying it) - guys liked it, I didn't want to bother taking a Lactaid just for a few bites... I ate mine plain. Needed a side other than potatoes, and I love rice with chicken, but didn't have much - so baked equal parts short grain rice and barley, with vegeta seasoning. When done, I put in the chicken drippings and the garlic from three roasted heads - yum! My son said I could make that every day! Also had kernel corn.
Tonight its chicken Tiki Masala over basmati rice and a side salad.

Tonight I'm making a favorite. Got a rack of lamb marinating in pomegranate juice and crushed garlic. It will be cooked in a jet air cooker (a small convection cooker) which makes the fat nice and crispy while keeping the meat tender and juicy. As well, I am making lemon potatoes and green beans. I make a sauce by reducing pomegranate juice, balsamic vinegar, and adding in a beef oxo packet.
