Today is my husband's birthday! I'm making baby back ribs with my own sauce, and baked potatoes. I'm making a cheesecake, as usual, for his birthday cake.

Last night I had veggie buffalo wings with boiled potatoes and asparagus.
Starting Friday I will be trying these recipes all vegan. :)

No idea about today but I tried a new recipe for chicken and rice casserole and omg...it's a keeper! I found the recipe on allrecipes.com, but doctored it up a bit and made a couple of substitutions from what I had on hand and we just gobbled it up! Who knew chicken and rice would be so filling?!
Tonight will probably be a frozen tortellini night with my rose sauce and nice thick slices of Italian bread. Oh! I just saw a commercial on tv that showed buttered bread sprinkled with Ranch dressing and broiled! Has anyone tried that?! I want to do that tonight, too!
Last night I had chicken cooked in french dressing and veggies. Nooo clue what to make for tonight. PLENTY of time though :)
No idea for dinner tonight yet. First I need to finish my Melitta coffee with Bailey's Irish Cream Creamo :P:P:P. Tastes like Baileys without the boozy part:P
We're having chicken burgers tonight. I'm going to scavenge through the fridge to see if there's enough stuff to make a salad with.
Ranch Dressing report: So I made the Chiabatta bread (1/2 loaf) with Ranch Dressing (although I didn't sprinkle it, I melted the butter then stirred the dressing into it so I wouldn't have any dry dressing bits), and it broiled very quickly!
However, WAY too salty!
I imagine if one cut the dressing, it would make a really tasty change from garlic bread.

FYI, you were looking for Vegan recipes a while back-there is a "all you need is cheese" flyer going around and there were a couple of really good vegetarian recipes that my daughter pointed out to me, one is a grilled veggie melt (so obviously you would make it without cheese or a vegan cheese subtitute) and it was really really good! Your avacado melt made me think of it!

Spaghetti and meat sauce with garden salad and garlic bread
pork chops in mushroom gravy, rice, corn and peas.
last night we didn't have the chicken burgers as planned, so we're having that tonight. I also made a potato and egg salad to accompany it and a weird experimental salad that consists of caramelized onions, baby corn on the cobs (the canned stuff), peas, coriander, curry powder, and some plain yogurt all cooked together in the frying pan with a bit of butter. Sounds weird, I know, but I sampled some of it and it actually tastes quite nice! I think raisins might add a bit of pizazz to it. Hmm.

Tonight I made a quick curry thingy,lol. Diced sweet potatoes, orange bell pepper sliced, Dark red kidney beans, jalapeno pepper sliced with a store bought very tasty curry sauce. I put that over the minute brown rice I used coupons for and served with bagged Asian salad.
I am so ashamed...I dialed 967=1111. Mmmm
Tonight I made an epically awesome shepherd's pie, tomorrow will be homemade wonton soup with green onion cakes and store bought spring rolls :)
I made some sort of pasta thing.
Chopped up sweet peppers, tomatos, mushrooms, and some garlic. I sauteed it in lots olive oil with some seasonings until it was brownish and smelling good (LOL)
Poured it over rigatoni pasta and mixed it in with a bit more olive oil and done!
It was REALLY yummy, think I might add a bit of onion next time.
Last night I made lemon chicken,served with faux rice and a green salad. Leftover homemade carrot cake for dessert. Not sure about tonight,maybe a stew,something in the dutch oven so I don't have to fuss over it.
About 1/2 an hour ago I made my veggie meatloaf that I will use tonight for dinner. I didn't really follow a recipe except for how to use the TVP(textured vegetable protein)
2 cups tvp soaked in hot water for 5 mins.
Then added 1 cup rolled oats
3 egg whites (I know I know, Im trying to find something better,lol)
oregano,thyme,salt,pepper,soy sauce,ketchup,tomato sauce,Chopped garlic and jalapeno,1/4 cup unsweetened soy milk. Added all of these ingredients along with lightly sauted onions to the TVP and mixed with hands and formed into a loaf pan.
Covered with tin foil and placed in the oven for 45mins at 325..At the 43 min mark I took the tin foil off and put on broil for 2 mins.
I made a sauce to go with it consisting of: 1/2 a cup tomato sauce, tbsp soy sauce, 1/4 cup ketchup, tbsp chopped garlic, oregano, and thyme.

Last night was Red Lobster for DH and I and it was our first time ever. Man oh man was it good and the biscuits were to die for :P:P:P:P:P:P:P:P
Salmon Pie
9 - 10 potatoes, mashed
1 Fillet of Salmon (cooked and flaked)
1 Can of Cream of brocolli soup
Put some mashed potatoes on bottom of pain, then your salmon, soup, and then cover rest in the mashed potatoes.. Cook at 350 degree's till golden brown.. and
serve
I'll be eating AYCE prime rib. This is my 5th day in a row eating a big chunk of medium rare beef. I can feel my arteries clogging up already.
I am joining a friend for a birthday BBQ supper. The weather is not good, so I will have to double check if the plans are changing.
there's no such thing as a bad day for a bbq. snow, wind, hail... it's alllll good.
