back from dd's appt at sick kids and i'm tired and my feet are killing me so an easy dinner tonight...pork cutlets, rice, beans and some cheese biscuits
Heating up a lasagna my Mom made (she pre-makes meals..I love it!)
Well...right now I have some pork back ribs hanging out in the smoker with mesquite chips (totally slathered in dry rub of course). An hour in there and I'll move them to the grill (low and slow) for a few hours before finishing them off with some homemade Jack Daniels BBQ sauce...these epic ribs will be served with chipotle baked beans, cheesy potatoes, grilled veggies, and BEER :)
Hooray to the start of a 6 day weekend :)

Last night was roasted President's Choice air chilled chicken. So juicy I have to put paper towels around while I carve it. Almost as juicy as brains! :lolsign:

Last night I made roasted chicken thighs and potatoes; fried cabbage and onions with peas.
Tonight we are having hamburgers!!! yum yum!

mm, I worked... we had pork roast, mixed veggies and sweet potatoes!
Barbecued burgers last night. Tonight will be pork stew - with all the veggies I can find; smashed potatoes and coleslaw.
yesterday was meatball subs, with homemade meatballs and sub buns. they turned out very well. tonight is going to be a cottage pie with coconut cream pie for dessert.
Potato bacon soup and cheese bread- if I feel up to it. If not, I'll get my Dad to bring something home.

Im not sure all what i'm making but I bought this amazing organic asparagus today, all thin ones looks amazing! The local mennonite veggie stand opened today and I happened to go by. I got organic peppers, asparagus and tomatoes. Yummy! Even better is no sprays or pesticides and they are some of the best looking veggies ever.
I'm trying one of those Burrito kits from Old ElPaso. The grandkids are coming over for supper - thot that they might like something different. Homemade pumpkin pie and icecream for dessert.

Patty started this thread in honor of one of Canada's great cooks, Ken Kostick from "What's For DInner"...now that he has just passed away, she asked for the thread to be deleted in respect...it would be nice if our wishes were met sometimes...
But we all like this thread, and post here all the time... :(
I think keeping it open is the ultimate sign of respect. Its a great thread, engages the community, and most importantly, centered around food! Ken was a cook! Not that I knew him personally, but I can only imagine he would enjoy discussions about what is on the dinner table. It is not harming anyone by having it open, nor is it causing disrespect, in my opinion.
This is one of my favorite threads- I get so many great ideas from it! I agree with the above poster, we should keep this thread alive out of respect. It's a love of food that brings us all to this thread. Patty, if you wish to expire it that's up to you but I would love to see another thread like it!
There were a bunch of threads expired. Not just this one. Unfortunately one thread wasn't the case. This thread is enjoyed by many. He passed away in April, almost a month ago. We as mods can't make that decision, please contact Boo with your concerns Thanks.
