The old coffee grounds are good for your compost but it takes new coffee grounds to make cold brew coffee. I made a filter out of unbleached cotton that fits around the mouth of the jar and then I dump the coffee grounds in. Then the water. Give it a stir and cover for 12 hours. It's supposed to be less acidic than hot brewed coffee. I've only used it for iced coffee drinks.
