    Has anyone tried the PC veggie meatballs? I bought the PC mushroom and swiss meatless burgers and they were pretty juicy and good. Although Im not a huge mushroom fan. I think I have tried about every kind of meatless burger and have yet to find "the one."

    The meatballs were a little dry when I baked them but good. The kids liked them. May have to simmer them in pasta sauce next time

    Thanks. Maybe I'll do a Sweet and Sour type meatball. I saw this recipe and it looks pretty good.

    It says to bake the meatballs in the oven on a cookie tray for 15 min. but this recipe is for beef/turkey, so I'd use the directions on the box.

    SAUCE:
    In pot mix 1 cup of water, 1/2 cup apple cider vinegar, 1/2 cup ketchup, 2 tablespoons cornstarch, 1 cup brown sugar and 2 tablespoons of soy sauce. Over a meadium flame, heat until mixture just comes to a boil. Remove from heat and pour over the meatballs. Toss the meatballs to cover with the sauce and serve.

    We went to Trader Joe's in WA and found Dr Praegers burgers. OMG the tex mex ones are the best I have ever tasted. Seriously they are so tender and tasty it is amazing.

    I have found the best veggie burgers are from the United States they have a great selection of vegetarian/vegan burgers, hot dogs, and other stuff there.
    We usually buy Morningstar burgers especially the Spicy Black Bean Veggie Burger because it tastes awesome. http://www.morningstarfarms.com/prod...=23&family=363
    We usually take a trip to the states in the summer and bring a huge cooler and fill it with enough burgers to last the winter and ice and it stays frozen for the 2 hour trip home

    Curry..

    1 bag frozen chopped spinach
    1 can lentils
    1 can white kidney beans
    1/2 cup toasted almonds
    handful toasted sesame seeds
    couple tablespoons flax seeds
    1/4 cup dried cranberries
    couple cloves garlic chopped
    1 jar spicy curry sauce
    salt/pepper to taste

    Add everything to a big pot starting with the frozen spinach and garlic. Cook the spinach and garlic by itself for a couple minutes and then start adding all the other ingredients to the pot and simmer for about 10-15 mins and serve over brown rice or Quinoa..very easy and I thought it was really tasty, enough to serve the whole family.

    I think I'll have to make a day trip to the states and do the same thing. I'm always on the look out for a great tasting veggie burger but still haven't found the one yet.

    I'm loving the Yves Veggie Dogs. I had this mind set that they tasted horrible from years back, but was craving a dog and fell in love with them.

    Hey guys! Lotus asked me for the recipe for my curry that I posted in the what's for dinner? thread so I thought I would share it here.

    Vegan Creamy Curried Veggies


    • 2 tbs Olive oil
    • 4 cloves garlic minced
    • 1 large onion sliced
    • 4-5 carrots cut penny style
    • 2 large russett potatoes cut into cubes
    • 1 small head cauliflower or half a large one cut into pieces
    • 1 cup frozen peas
    • pinch cayenne
    • 1 tbs Curry powder
    • 1 tsp tumeric
    • 1 tsp ground cumin
    • 1 can coconut milk
    • 1 tbs soy sauce


    1. Prepare Veggies.
    2. Heat olive oil at medium high in large pot, add garlic and onion and saute until onion begins to turn translucent.
    3. Add carrots, cauliflower and spices and stir. Lower to medium and cook covered, stirring occasionally until tender enough to poke with fork but not over cooked.
    4. Add coconut milk and potatoes and stir to mix. Continue cooking until potatoes are fork poke-able.
    5. Add frozen peas and soy sauce. It's ready when the peas are hot.

    I usually just have it with rice, but it's great with naan too. Thanks for letting me share with you my favorite recipe.

    thanks again, bugga, sounds amazing and I'll be attempting it this weekend! probably on a bed of basmati rice because mmm, basmati rice. really appreciate it and I'll let you know how it turns out.

    on another note, I love the term "fork poke-able". quite a few of my recipes contain the same. the phrase "can you foke it?" has been spoken in my kitchen, lmao... highly professional here.
