Cough Drop Lollipops

½ cup to 1 cup honey (honestly any amount would do probably)
Candy thermometer (optional)
Lollipop sticks
Lollipop mold (although if you do not have a mold you could make free form lollipops by pouring the honey over the stick on a non-stick surface)
Cook-
Pour honey into small saucepan and cook over low heat. Stir constantly and bring honey to a boil. If using candy thermometer, insert in and continue to stir the honey until it has reached a temperature of 300 degrees. Remove from heat and move to test phase. If not using the candy thermometer then continue cooking and occasionally test. Just don’t wait too late to test; testing too early is better then testing too late.
Test –
To make sure your honey has reached the right consistency, place a drop or two of honey into a cup of ice water. If the honey turns and stays hard (like a hard candy) then you are good to go. If it is still soft then you need to keep cooking a bit longer.
Making the Lollipops –
With Molds- Grease lollipop molds and insert sticks so that they are ready in the mold. Pour honey into mold and let cool at room temperature. (No cheating and putting them into the fridge. It won’t work)
Without Molds- Lay lollipop sticks on a greased non-stick surface such as a silicone mat or parchment/wax paper. Carefully pour honey over each stick, creating a free form lollipop.
Making Cough Drops sans sticks-
Instead of making lollipops, you can of course make regular cough drops. You can purchase cough drop molds or any small mold will work. I used my lollipop mold to try out my cough drops and it worked fine. You could also create free form cough drops just like the free form lollipops. Same instructions apply; pour honey into mold or onto a greased non-stick surface and let cool.
Add Ins-
Now just plain honey is great but you can get really creative with these! I have made cinnamon cough drops as well as a ginger variety. I am also interested in trying herbal cough drops my steeping herbs in the honey (you’d probably want to strain the herbs before making the cough drops) Think chamomile, thyme, or mint. I have also heard of using some essential oils such as lemon or menthol. I’d also be curious to see how a dash of elderberry syrup would do in these cough drops. I’ll have to try that out once I make some elderberry syrup.

Pepperoni Roll..
use pre packaged frozen dough, cheese, pepperoni, some herbs and olive oil.
Loosely cover the frozen bread dough with plastic wrap. Allow dough to thaw for a few hours at room temperature.
Roll dough out to approximately 11 x 11 square.
One frozen dough log makes one pepperoni roll.
Brush dough with olive oil or whatever cooking oil you prefer.
Lay pepperoni on dough covering entire surface. You can use sandwich pepperoni from the deli.
Sprinkle with shredded mozzarella cheese.
Next, sprinkle with shredded Parmesan cheese. You can use grated from a can if that is what you already have on hand...but you can buy the shredded Parmesan in a bag. You'll find it right next to the other bags of shredded cheese.
Lightly sprinkle with Italian herbs...basically, some dried oregano, parsley and basil. Be careful, not too much....oregano can be very strong and you don't want too much!
Add a sprinkling of garlic powder.
Roll up dough starting at one edge of square.
Place rolls on baking sheet, leaving space between.
Brush some melted butter on top of uncooked pepperoni roll.
You do not need to let rise. Bake it right away. It will rise up in the oven perfectly.
Bake at 375 degrees for approx. 15 to 25 minutes.
Oven temps. and times may vary.
When done, top of roll should be golden brown and you should be able to make a tapping sound on the crust with your fingernail...just the same as when baking bread.
Make sure you allow pepperoni roll to cool completely before serving.

Baked Apple Slices
2 large apples, cored
1 medium lemon, cut in half
2 tablespoons sugar (optional)
1 teaspoons cinnamon
Arrange baking racks in the top and bottom thirds of the oven.
Preheat oven to 200ºF.
Prepare two rimmed baking sheets with parchment paper.With a mandoline or sharp knife, thinly slice apples crosswise about 1/8-inch.
Place apple slices in a single layer on prepared sheets, and sprinkle lemon juice from each lemon half on every slice.
Mix sugar and cinnamon in a small bowl. Put contents into a sieve and sprinkle evenly over apple slices.
Bake for 2 hours or until apples are dry and crisp. about 2 hours.
Remove from oven and let slices cool completely before transferring to a sealed container for up to 3 days.

Turkey Cucumber Rolls
These look like a great lunch!!
ingredients
1/4 cup chopped cucumber
4 tablespoons softened cream cheese (can use low fat)
3 large flour tortillas (you can use low carb wraps)
1/4 pound sliced smoked turkey breast
Directions
Stir cucumber into cream cheese, spread on tortillas, layer with turkey slices and roll up
Can also slice these into smaller "bite size" for a party tray
