    Tonight was beef!
    Tenderloin from Costco, nice thick cut.
    But you need to take the tip off, great for aps
    Fabulous on a kabob. Just not with my steak.

    I had a steak today for dinner was nom. I am not a big meat eater but I do enjoy a good steak, burger, or grilled chicken here and there. I try to eat red meat 2 times a week and white 3 times. Get a good balance in.

    Just a follow up on the steaks from Sunday.
    They were delicious and did the rest of them last night.
    Even more melt in your mouth after marinating for two more days.

    Jen got to pick the menu for mother's day dinner.
    Stuffed salmon from Costco, planked on the BBQ was the protein.

    I make Stilton stuffed Portobello mushrooms on the grill with steak all the time.
    Lately I have been experimenting to find other types of stuffing for different meat combo's

    I think I have struck on a winner. I will take pictures and do up a proper recipe after I make them again.
    Basically I made feta bruschetta in a mushroom cap.
    Next time up I will make them with grilled chicken and pierogies.

    Yes Bok Choy, I quarter it, add a generous spoon or two of chopped garlic, some seasoning salt, couple tablespoons of olive oil and and then the secret ingredient!
    Shake it up in a zip lock, let it rest for 20 minutes or more.

    I usually add red pepper flakes depending on who is eating.

    Grills in about 10 minutes, stir it up a few times.
    The secret ingredient is Ponzu sauce!
    Easy enough to make or just buy the Kikkomen.

    Shrimp on the Barbie and Caesars for appetizers.

    I had a very busy week-end at the boat - and preparing to go to the boat...

    Friday I cooked 2 small (stuffed) turkeys for Saturday night's dinner (heated on the bbq), a crock pot full of chili, and another crock pot full of pulled pork for lunch Saturday, carrot cake, and I prepped some coleslaw - the rest of the week-end was easier for me but still tasty... Ham, roast beef, left over turkey and leftover pulled pork sandwiches for lunch Sunday, burgers and chicken breasts for dinner Sunday, and jumbo hot dogs for lunch today... I made some home made coleslaw for dinner last night that was a hit with the "boys" (My son's "muscle" friends). Breakfast yesterday was BACON - and turkey bacon, eggs and toast. Today's breakfast was sausages, pancakes and french toast....

    The docks and boats are all in, the chairs, etc., are out and we're ready for the summer. It was done so fast with my son and his friends....

    I need to go to w*rk for a rest tomorrow!!!

    I helped my Neighbour put together a new Weber on Sunday!

    Only took an hour, straight forward!
    Filled her up pretty good!
    This is after the sausages and shrimps went in to the warming oven!
