I finished putting the soup together tonight.
Boneless roasted Turkey breast and spicy carcass stock, substituting for the chicken base in the original recipe.
The stock was made with 2 bottles of Corona and some fresh ginger and lime.
I also used three whole large green chilies and one finely chopped scotch bonnet pepper for the stock, along with the usual onion, celery and carrots.
Yellow curry and turmeric for colour, although with the red curry paste in the final soup, I am not sure it mattered.
Everything was strained off and the broth chilled so I could skim of the fat.
I roasted the turkey breast with oil, sage, garlic and red pepper flakes and used some of the soup stock to clean the drippings from the pan and added it all back to the stock pot.
The stock came out great, rich layered flavours!

Canadianize your Curry, use Turkey and say you're Sorry!
It works...
Turkey has a stronger flavour than chicken and stands up to the curries and spices better!
Even my Grand Mother put ginger in her Sage Turkey dressing to help digestion.
Yellow curry coloured the stock later. Get your KD Now!
I just kept stepping up the curry and the heat over the years!

Neighbour's teenage boy just dropped off a 3 foot trout he caught today.
Of course they don't want to clean it or fillet it.
Looks like a big fish feast for Saturday!
