you could buy several packs of old el paso taco seasoning and a lot of hamburger. cook up all the hamburger with the seasoning then divide it up into ziplock containers to freeze that way you can just heat up the already seasoned meat (just make sure you loosen the lid so the container can vent) and throw it on a some tortillas quickly. tacos are one of my favorite foods and ds#1 loves them too. imo this was easier for me to make than a lot of the frozen meals since they usually have to be heated in the oven but these can be microwaved quickly to warm the meat and very easy to just spoon it into the tortilla...

I dont know if you have anyone to help you cook or not. dh makes supper when he gets home and also makes lunch for the next day... usually something he plates up and puts in the fridge for me so i can just microwave it. if you have someone to cook for you heating up food from the fridge is usually better and easier than heating up frozen foods.

I love all the ideas mentioned here!
what about perogies? i know you could get store bought and just make those, but I LOVE homemade perogies and if you have some time before baby comes, you could do a full day with a friend and split them. mmmmm i'm getting hungry now!

I always buy ground beef/chicken/turkey in bulk and make loaves, balls and burgers. Saves a ton of time, doesn't take all day and can usually feel my family of 3 for a couple of weeks. Congrats on new baby!! One thing a bunch of my friends and I have done is MealBaby.com. You list what it is you need/like (mealwise) how many people you need to feed and set up a calendar which everyone can sign up for to bring you a meal. Not sure how close your family/friends are (distance) but just thought I would mention it as an idea. Here is the link if interested: http://mealbaby.com/
